can experts here tell me please if adding the peppercorn in the whole form , gives out any taste in the salan? coz its got a hard skin and i often wonder if it is a waste to add the whole form … powdered one tastes alot better ![]()

My mom used to add them to her rice dishes....hated biting into one so I go with powder all the way.

Thanks sara .. I do like black pepper , but not when i bite into em … most people dont eat them , they just side them up and it gets thrown out … so why put them in the dishes in the whole form
.. hai na .. powder form seems like a better option ..

powder form has a lot of taste to it and gives hotness to a salan n garmi to garam masala..........ya whole form always gets thrown away just like whole cloves

Khara Masala/whole spices are used for certain kind of light flavoring and aroma. Yes they get thrown away after they have served their purpose. If you want you can recycle them , like you can grind them and turn them into ground garam masala if you want. They still give lot of aroma and flavor if you ground them. Azma'ish shart hay.

I usually put whole peppercorns and my husband hatesss it! but i dont know how much powdered pepper i should put instead.
What is the approx. ratio? Like if i put 6-8 peppercorns, how much powdered black pepper should I put instead?

Saks , that would be quarter tsp ... I once measured it ... just to get an idea of how much to grind when i do so in the little spice grinder ...

saves time in grounding them (i know there are machines to do that but like in pakistan people who still use sill bata to crush the spices…its quite hard to use)…plus the ones grounded with machines has less taste compared to whole or grounded by hand.
some people like the whole ones.
and another main reason is that…when the pepper is grounded its aromatic flavour can evaporate quickly. thats why its recommended to ground the desired amount for the use or use whole ones.

Use the whole ones only in rice, for everything else its the powdered one

Thanks for all the wonderful replies ... I have a question , should cloves also be powdered first before using? or would they become too strong a taste in the dish?

Never tried powdered cloves? they seem to do the job as a whole, and they are easy to pick out too

.. I meant from the waste perspective , when we use the whole masala , it gets wasted hai na … so perhaps if we powder them , that might save it from getting wasted .. unless its got a strong taste and it has the possibility of ruining the taste of the salan too ..
I guess someone who makes garam masala at home might be able to shed some light on this .. do cloves taste very strong when powdered?
