St George was Christian officer in the Roman army during the time when the Roman Empire was still officially polytheist and anti-Christian, so he hid his beliefs. He was eventuall assigned to be one of the Emperor's personal guards.
When Emperor Diocletian ordered his soldiers to hunt down Christians, George refused to obey the order, admitted to being Christian, and spoke out against the Emperor's policy.
Diocletian was enraged, and had George tortured for days and ultimately had him beheaded.
Since St. George was killed in 303 AD, he was unable to have interaction with Muslims.
