Vanilla essence is absolutely artificial and synthetic, derived from chemicals to mimic the flavor of vanilla. Vanilla extract is made from the vanilla bean, by soaking it in alcohol or glycerine and water to extract the natural flavor. If you're in the US, you can find natural vanilla extract that is alcohol free at Trader Joe's or Whole Foods.
