my cousin told me to buy sodium thiosulphate crystals n put 1 crystal in one big bottle but i dono if thats safe? did u guys ever make t-ketchup at home? which preservative did u use? how long does it work for? do u have to keep the container air tight? is it also possible to make a month’s hurri chutni [pudina, hari mirch, lehsan wali] n use this preservative with that n it wont go bad?
i m thinking for ramzan this yr thats what we shud do roz roz nai banani ho gi phir. u guyz shud try that too

has anyone ever made maash ki daal ki phulkiz for dahi balay? we always use the ready made packets of phulkiz. i heard u just add water n some oil n zeera n namak n haldi n mirchein in mash ata n goondhofy n fry small phulkis. but how do they become hard? i wana make sure that as usual i dont mess it up before i try
irem ...i don't use any chemically known preservatives to my ketchup ....i add vinegar to it ...n it preserves it !
maash ki daal k bhallay /.....u don't knead/goondhify it ....you soak daal over night then season it n chop in a chopper ....fry the spoonfulls in oil ....n thats it ....i make them in bulk ...then freeze them ....when i need them ...i add them to boiling water ....then keep on slow flame for sometime ...n they r ok !
waisay only maash ki daal k bhallay ...r a bit stinky ....i use lets say 1 cup maash ki daal n one cup daal moong ...(equal portions)
actually amount of vinegar depends on ur recipe....lke ammi used to make ketchup with imli in it ....so coz of it she needed less vinegar ...!"
my recipe is :
tomatoes 1/2 kg
sugar 1 cup
salt 1 tsp.
garam masala 1 tsp
vinegar 1 cup
corn flour 2 tbsp.
wash tomatoes cut in halves or 4 pieces ....blend with just a little water to make smooth paste(you can strain it now .if you like....i don't ) now add all except last two n cook....when reaches a reasonable consistency add cornflour dissolved in vinegar.....cook for another five min.
remove from fire ...cool n put in bottles !
n yes you use transparent vinegar ....usually known as synthetic/white vinegar
i have yet to experiment with haree chutney that way ....normally i make it n freeze in ice cubes tray .....whenever i need i take out a cube or two ...if in hurry defrost it in microwave ...otherwise just wait n then mix in curd .....n its alright !
btw ....usually i make imli ki chutney ....the cooked one ....n it tastes yummy specially with roast or cutlets!
