I always cook Salmon/Mahi Mahi with either Shan or National masla, comes out real good.
I use whiting fillets, catfish fillets, salmon and tilapia. All are delicious pan fried with Shan fish masala and some atta coating.

Here’s a recent salmon fillet I did…
I turned the leftovers into salmon cakes the next day
For the salmon:
lay your salmon fillet skin side down on a foil lined baking dish…spread a layer of dijon mustard over the flesh, then sprinkle with salt & fresh ground black pepper…for the topping, if you have italian seasoned breadcrumbs, just combine that with melted butter and sprinkle over…i only had plain Panko breadcrumbs, so i combined that with a packet of italian seasoning and then proceeded…bake at 400 until fish flakes easily…then, to use the leftovers the next day, take whatever salmon you have left and shred with a fork…add one egg, some more breadcurmbs, finely chopped celery & red onion and some grated parm cheese..mix well…if it seems too wet, add a little more breadcrumbs…form into patties… in a non stick pan, heat 1 pat of butter with a little olive oil…cook until patties are crisp and brown on the outside and warm through the middle…i served them with tartar sauce, and steamed veggies!

i overdid salmon so have been avoiding that for a bit
try to do more cod, turbo, red snapper, rainbow trout
I mostly pan fry them with salt and pepper, lemon, very simple,
another pan fry is with garlic, parmesan and topped with tomato sauce
or bake them with tomatoes, onions
when all else fails, shan fish masala and pan fry

I love fish. Salmon, trout, snapper, tilapia, mahi mahi, halibut...I try to keep fish simple though. It's so delicate, I feel like masalas just kill it. Like X2 said, simple ingredients work best for me...salt, pepper, lemon, garlic, parm. And I love grilling it.

King fish when making curry
Haddock/halibut when we are making fish n chip.
We normally either BBQ or PAN roast it with salt , pepper, oregano, lemon and pine nuts
