I dont know whats going on but it seems like keema is cursed for me. About a year or so ago I stopped getting keema cos every time I bought it and cooked it it would turn out really horrible. It didnt smell or taste like keema and my husband agreed with this. I really went off it and promised I wouldnt ever buy it again, which was a difficult decision cos its my fave dish ever ever ever. I know its not my cooking for sure. So it has to be the keema.
My mother in law came in August and she started getting it again and it was great. Now shes gone back to Pakistan Ive carried on getting it and cooking it and its been absolutely wonderful…until 2 weeks ago. I cookeed it and I could tell the exact same smell and taste as before so I told my hubby to buy it at another butchers and that turned out the same again. Now please dont say its my cooking because it certainly isnt. I tasted the masala before I added the keema and it was so tasty. After I had added the keema it went all horrible. It tasted like nothing just no flavour no taste nothing and a horrible smell iwth it. I have again given up keema.
Has anyone else ever experienced this problem?

It sounds as though you make masala first and then you add ur keema to it - why not try a different technique to cooking keema dishes altogether?
I'm very particular about eating keema and will never eat it at someone's house unless im 100% sure buy the look of it that is well-cooked and doesnt smell or have those big blobs in it.
My way of cooking keema is as follows:
1) Heat oil
2) Add sliced onions - cook until golden medium brown
3) Add washed keema and continuosly stir on medium-high heat for good 15mins until it is thoroughly cooked. (Some ppl make the mistake of walking away from the cooker and leave the pan on low heat to simmer this in turn produces blobs in keema and it gives a disgusting smell too. You must stand infront of the pan and stir continuosly to really cook the keema and at the same time ensure that you mash the keema with your spoon/dhoy).
4) When keema is cooked (should look med-brown in color) add crushed fresh garlic (about 1- 1 1/2 teaspoon at least - this kills the smell).
5) Once garlic has gone golden in colour add drop of water then add some crsuhed ginger, and cook till golden in colour.
6) Now make up the masala by adding salt, red chilli powder, turmeric powder, tomato puree, fresh sliced tomatoes and cook on medium heat with few drops of water again.
7) Then depending on whether you want to make it a dry dish on its own or add some veg or make it abit masala (ras-missa like they say) - just add water as much as desired and simmer on low heat for few mins.
8) Add green chillies and fresh dhaniya and ur done!

well...i make it in a very different way.....
i just add all the masalas,sliced onions,tomatoes,gingerngarlic paste and keema all together.....and i keep it on a nrmal heat until keema is almost cooked n after that i bhun the keema until it leaves it oil.....

Mysterious woman- Thanks but like I said its nothing to do with the way i cook it cos I always cook it like that and have done for years. No matter which way I would have cooked it it would have gone wrong cos its the keema. What I dont understand is 'why'???? Even when we bought it from another butchers it was still like that. I'm so disappointed cos its my favourite dish in the whole world.
I've had to throw away two lots of keema in the last two weeks and I've wasted all those ingredients as well. :(

I have the same problem with Keema.
I just don't cook it anymore.
It turns out dry and taste less.
I might try mysterious woman's recipe though.

the same thing happens to me...i hate making keema. i just take it to my mom's and she makes it for me and voila - no smell keema...i don't know what she does different than me...other than making it in a pressure cooker.

i luv keema...maybe if u buy the keema from somewhere else and cook it differently u myt get some taste out of it...probably...

using more garlic for some reason gets rid of the smell....

Make sure to ask for extra lean meat. I think that will make a difference...
