I want to impress my in laws once im at their house by making something that they dont normally eat or dont eat at all, something different, not common in pak, what can that be, and it has to be fairly easyish and simple,

Hi Nadz,
I was going to suggest pancakes as well. What I've noticed is that often times older desis are very fixed about tastes......and prefer food that they're used to eating on a regular basis. So while you experiment with recipes that they're not familiar with.........don't underestimate the impact of wowing them with well-cooked desi recipes that have your own twist to them. For example.......there are sooooooooooooooooooo many desi chicken recipes that your in-laws have probably never tried. Chicken recipes that vary from the usual chicken korma aur chicken karahi. You can look them up on the internet.......try making them at home.....get comfortable with them......and then cook them for your in-laws.
You can also try to find interesting desi kabab/cholay/beef/egg/vegetable recipes.
If you want to bring in a bit of British culture to your in-laws.......how about some british puddings or pastries or cakes? You can even experiment with soups, salads, and appetizers. You can even wow them with simple recipes like a smoothie for breakfast.

how about mushroom rissotto. Mushroom are hard to get in pakistan i think unless they are in a can. Also the rice used is not long grain, its short grain Arborio rice.

Umm.. pancakes. Those are like totally available in pakistan I'm sure. My cousins came over last summer from pakistan and I mean they totally ate waffles/ pancakes in pakistan....
Lasagna is also very common in pakistan. I was thinkin along the lines of perfecting a chicken pot pie.. or a meat loaf.

hmmmmmmmmmmmmmm, no i wont be staying there long, only 5 weeks then im back....me and huby coming back to work.......
but while im there i want to impress them....with my at-the-moment-non-existent culinary skills....sigh

Inspired by bhenjee, I would suggest you make a chicken pie with a puff pastry top. I don't know where u r going to get puff pastry from in pakistan unless u make your own, or find it ina supermarket, or visit a local bakery and ask them to supply you with uncooked pastry.
That is a base of browned chicken in a cream n cheese sauce, you can add some mushroom n sweetcorn or something to it.
Also, they do love their soups - get a knorr packet (readily available there) and add some veggies or pieces of chicken to it while it cooks.
Take some decent olives and antipasti ingredients with u (like marinated peppers and artichokes etc in jars) and arrange some starters with hommous and fresh naan pieces to dip with.

I know lots of pakistanis love chicken kiev - garlic / herb butter stuffed into chicken breast and rolled in breadcrumbs then fried. U can have it with mashed potatoes and some broccolli.

Before you consider any baked item, please make sure they have a fully functioning oven. How about making quesadillas or something like buffalo chicken :)

Or, I'm thinking that you could take one of those pillsbury tubes with you. I'm sure they can survive a day in the suitcase and throw them in your in-laws fridge as soon as you get there. Later you can just tell them that you had these lying around and you didn't want them to expire/ go to waste, so you thought you'd take em with you and uitilize them in some way. You don't have to tell them that you prepped ahead :D
