What veggies do you cook/eat and how?

I am very lucky to have a toddler who generally enjoys trying foods. She doesn’t eat a lot, but she eats well generally speaking, and loves the healthy stuff.

But she gets bored very easily and wants something new offered to her. I feel like I’ve run out of ideas, especially for veggies.

What veggies do you cook/eat and in what forms? Any specific tips for young children?

I usually cook peas, spinach, carrots, zucchini – steamed, sauteed, desi-style, whatever. She’s not a huge fan of sweet potato, and even regular potato is not that popular.

Any suggestions?

Ok so I used to microwave a potato, then grate it. Add grated or shredded zucchini, shredded carrots, beets, add some cornstarch andlighty fry... Like hash browns.

Hav u tried making alphabet sooup with mixed veggies? You can buy alphabet pasta and make a regular chicken broth based soup.

Hmmm, corn? Steamed with butter.

Oven roasted beets and sweet potato salad.
Steamed veggies with teriyaki sause(cauliflower,brocoli, snap peas, carrots, mushrooms)
Sweet potato fries
Roasted or boiled Corn on the cob
String beans sautéed in olive oil and garlic
Grilled mushrooms, zucchini, squash with cream cheese
Roasted eggplant dip

I roast, i pan fry, i steam, i boil in stock, tortillas,

Its disgusting but he wants all his veggies raw! So all veggies that he can have raw, i give it to him as is...

He loves this cheese roti i make (he cant handle paratas cuz thwy go crisp)... Kher... Make roti.. When its done, add shredded whatever veggy with cheese... Fold... Let it melt. Cut into small bites. Hand them a fork.

Another one is dosa (or just make a pancake), and add the veggy and cheese...

Mine likes parathas.So mostly I add some peas/carrots/potatoes with chicken and make parathas.
A few days ago I cooked a spoonful of blended peas/corn/spinach with half a tomato and one carrot and mixed it with whole grain pasta (because these days pasta is a hit)
She likes potatoes..has some with plain roti or rice (not that often with rice though) or just mashed up from the salan we are having.
I make zucchini frequently too (desi style) and she has had that too.

I personally feel as if I am not giving her that much veggies,but since finger foods is all she wants these days I have no idea how to introduce more veggies and which ones....
