my hubby got a truckload of baingan yesterday, and only after chopping it up did i realise that it was twice the amount we needed! so i cooked up half of it, and now i am wondering how to store the other half…
any ideas? its raw and cut…will it keep in the fridge for 2-3 days? i dont know whetehr i shud freeze it? or shud i boil it, mash it and freeze it?
bengan doesnt stay in the fridge very long, esp when cut. you definitely will ruin it if you freeze it.
pakoras or bengan ka raaita or bagharey bengan? pickle them?
You can make baingan pakoras for your own family and also share with guests, friends, etc.
You can make baingan ka raita.......where you fry the baingans and put them in yogurt.
You can make baba ghanouj which is a Middle Eastern eggplant appetizer.
You can eggplant parmesan.......fry in breadcrumbs and serve with marinara sauce and cheese over a bed of pasta.
You can experiment with a variety of eggplant salans.....baingan ka bharta........bagharay baingan.
I've read on the Internet that you can freeze egglpant for later use. If your hubby has brought a truckload of baingan that you're afraid will go to waste, then why not give some baingans to friends? I've seen people give fruits and veggies to friends.
I have this great recipe that u must give a try.
Grilled baingan:
1.Grill the slices over a griller. If u dont have a griller, smoke them using coal n then fry them slightly.
2.Fry onion paste and add to it a table spoon of tomato patse. Cook slightly n then add pulp of dried plum, a teaspoon zera and garam masala.
3Now in a dish, spread this mixture, n put over it the sliced baingans. Just before u have to serve, put some beaten yogurt, over the baingan and the masala. Garnish with corriander. This will not only look good but taste great as well!
