Shimla mirch is called bell pepper in US . I do not know what is it called in Canada or other parts of NA or Europe , Australia or other parts of the world.
I have seen many version of this bell pepper here , red , yellow and green of course. They add color to dishes and salads without that zing which is trade mark of all chillies.

Blend them with a little water (also can add tomatoes) and make chicken salan with it! Make the regular salan and use this blended mixture as the gravy (using it instead of tomato paste)
You can make a stir-fry, stuffed pastries, or lasagna with diced green peppers, or a salan such as chicken jalfrezi.
You could make chicken braid…there was a recipe posted on here a few months back. It looks complicated, but it’s sooo easy. I made it myself during Ramzan. I changed the recipe a bit by using cream instead of milk and I incorporated mushrooms with the chicken. But I’m sure it will taste great if you also add cheese, and green peppers…it’ll impart more flavor…and stuffed pastries are so versatile that a variety of fillings work well.
I make mixed vegetable salan using these peppers,carrots and potatoes.Just the ususla way with onions and tomato masala with the regular spices and cook the veggies in it till done.
