Consider a non muslim couple…wife decides to embrace islam but husband and child do not and continue being non muslim.

My understanding is this.
If it is a Christian/Jew couple and the man converts , he can stay married to his wife as Islam allows men to marry women from people of book. It is different for a woman, she cannot stay married to a person belonging to people of book other than a Muslim.
For every other kind of non Muslims the marriage becomes void the moment one of the spouse accepts Islam.

^in addition to this, if they both convert to Islam then they don't need to get married/nikah again.
