Please tell me basics about cooking/baking/roasting etc that i should know. Also, tell me what basic dishes i should know how to cook for sure. I mean i dont want to look like newbie because my jethanis are already an expert. So please suggest:

well … Dont wanna sound like a Grandma , but here are a few handy tips :
Cooking is one of the most interesting elements in homemaking i believe , no matter who does it , you or your husband , but believe me you will enjoy life alot more if you know cooking
Gaining expertise quickly is impossible when it comes to cooking , it really does require practice and try to look beyond the process and focus on the logic of why you are doing what you are doing , learn a bit about the ingredients , that will make everything easy for you to remember.
Learn basic cooking and do it a few times before your jethani gets to eat your haat ka paka khana it will save you from embarassement , trust moi
If you look for the thread here , its called “cooking - The Beginners Guide” .. I have written some basic masala recipes in a lot of detail .. they will help you through your difficult time, inshallah
Let us know what particular recipes your husband or you like /love and we will try to find you the easiest recipe and make you an expert in it

ok first things first u gotta WANT to cook rather than need to cook. i never cooked in my entire life just learnt 4-5 dishes from my mom in high school that too by just standin with her and observing her puttin all those masalas. i got married with only this little knowledge and no practical experience at all. but i did so well MA. i made normal khana at home..experimented alot!! now i m an expert in tikkas, biryani, chapli kabab, keema, u name it! there is no hard and fast rule in cookin... u experiment alot (but ofcourse dimaagh se, u shudnt b puttin an italian herb in desi dishes) or maybe u can but thatll b fusion and a risk!! i suggest u learn the way i did.. v simple. i learnt salan (that basically covers all kinda salans with veggies or daal), korma, biryani and veggies. thats it. read the cooking for beginners thread ull learn how to make salan from there. but to b honest, i dun think one can learn as much from reading esp if ure new to cookin. better ask someone in ur house to cook and u can just go from there.. trust me the feeling of cookin urself and the compliments.. its just heavenly!!!!!! pls do not rely on shan masalas and all that ready to cook... learn by urself from the scratch so u never feel the need to use them. i used these masalas only 3 times in my 5 year marriage thats it!!!! its a big achievement. always learn and cook/bake from scratch. the satisfaction u get in the end is justtttttt priceless! good luck!

Assuming that your guy and you both like desi khaana, your basic cooking repertoire should include the following dishes:
Daals (toor/arahar, channa, masoor)
Salans (mutton/veal) - you can add vegetables (potatoes, beets, squash/loqi, turnips, spinach) to this to change this up
Kebabs - the simplest is kachay keema ka kebab, but shaami and chapli kebabs definitely impress
Qeema dishes.
Rice - plain, pulao and one biryani
Raitas
Vegetable bhujias/tarkaris - bhindi/lady finger, loqi/squash, turnips, turray/zucchini, aloo-palak are some simple ones
Roast chicken and chicken salan
Roti/paratha
Oh and at least one dessert - a simple one is kheer (takes a bit of time to make), but it should be easy enough so that you don't mess it up.
Although, the reality is most people's recipe repertoire depends on where they're from and what dishes are common there - but knowing how to make the above dishes gives you basic skills to later build on.

Chapatis!
Salans you can experiment and learn as you go along plus there is so much help and information available out there. But roties is something you learn by only making it yourself, no amount of cookery books/shows/internet browsing will help you master this art. So make sure you ask your mother/sisters to help you make the perfect chapatis, and practice as much as you can before taking on the role of housewife.

I think they already know i am new to the business of cooking. I am just scared that in the first week or some thing, some one prompts the idea.. how about Daffy cooks today and although i know some things Id be dumbfounded knowing so many people have high expectations. A lot variety of dishes is already cooked at their place and the nunds, bhabis, mil all are into the business of cooking.
The problem is i dont enjoy it as much. Things i enjoy doing i tend to learn, as i find it interesting. Anyway, I will have to learn and enjoy it no matter what - afterall its a family who is crazy for food
How about I start with unusual dishes which will give the impression wow! since they wouldnt know how to cook that or the basic ones first?

By the way, I already know how to make chicken-vegetable chowmein, custard, jelly, french fries, fruit chaat, 2 types of raitas, Lab-e-shireen (a sweet dish), Channa Chaat, Vegetable rolls, Alu tikkis, 2 types of sandwiches.
