What potatoes?

What kind of potatoes do you use for salans/curries/etc?

I never gave it much thought but last month I bought a bag of Idaho potatoes–first of all, they took FOREVER to cook…and secondly, they actually tasted kind of sweet..no matter how much mirch was in the salan..

I now realize there’s several kind of potatoes…idaho, brown, russet, sweet, red etc. what do you use?

I like my Yukon Gold best.

Idaho or Russet.
I never thought they are sweet or take too long to cook.

I use Yukon Gold potatoes for almost everything.

In the UK, we use baby potatoes.

baby potatoes for salan etc and i think its white potatoes for tikkis/aaloo paratha fillings etc .. have used others too .. some got mashed up in salan, some were too sweet for the filling - don't remember names though!

indeed as Potatoes are seasonal and usually harvested, depending on the variety and where in the country they are grown ..

I find white ones develop a bitter aftertaste easily. Yukon gold retain the rich flavor for longer and complement pretty much any type of cuisine.

Ok so I had to google Yukon potatoes, and it so turns out that's what I am using and always have :)
at the supermarket they had different bags of potatoes and it does tell you on the bag itself what that particular potato would best for so ie. baking, roasting, mashing etc
I go for the ones that says good for everything so it's a versatile spud and it tastes nice in all dishes.
