At the butcher, what kind of meat do you buy? How do u explain to them you want the best cut? Sometimes at halal meat stores, I find it hard to explain to them what exactly I want.
Also, in goat meat, what cuts do you use for regular salan? Do you buy shoulder part or leg part?
SInce we live in an area where fresh halal meat is not availible, we buy a whole goat when are in Chicago. We jsut choose the goat, and they pack everything in small packages. I think the store we buy from is used to doing things in a certain way and we like waht they do, so never have to tell them we need a certain type of cut.
Sounds like i am no help at all, lol. But for salans and stuff, i try to find a packet with alot of meaty pieces instead of say chops or just bones with none/less meat. THose you can make yakhni out of or use to make shorbas.
For regular salan i will prefer goat leg pice, specially for nihari and qoarma, well besides this u can use any kind of meat(shoulder) for regular salan besides the rib part that has more bones. Under cut meat is use specially for chinese dishes and i guess chops are for frying.
shoulder meat can also be used for pilaou biryani.
Heaps of Mince, not lean cause when making koftas or kebabs lean falls apart.
In beef, round steak or tenderchuck pieces are very good for making salans.
I dont buy the already cut botis, hate eating tiny pieces of bones stuck to the meat.
