does anyone here know what is Kachri powder? I using a recipe which lists this ingredient and I’m clueless!
Re: what is "kachri powder"?
It's a type of tenderizer used in boti kabab type of dishes.
Re: what is "kachri powder"?
You can substitute it with kach-cha papita/raw papaya.
Re: what is "kachri powder"?
But kachri has its own taste which you can not get from papita. Kachri qeema is really very tasty dish.

No it is not.
Re: what is "kachri powder"?
As a side note, raw papaya is not suitable for pregnant ladies...just thought I'd mention it as I know a few ghuppies are in that way...
Re: what is "kachri powder"?
Katchri Power is made from a small brownish-yellow melon indigenous to Rajasthan. It is used as a tenderizer, but also adds a tangy flavor. Katchri Chutney is a tart condiment (one of their trademark dishes). I found out about this spice through Gordon Ramsey's Great Escape, where he traveled to Rajasthan to make a 300 year recipe called Khud Khargosh made with goat. I am interested in these recipes and am excited that I found kachri spice online via google at eastwestbazaar .com Good luck!
