which snacks/food would you freeze for unexpected visitors?

I would do the follow:

Samosas
pastries
kebabs
tikkis
chicken aloo tikkis
fish kebabs

would you marinate the chicken tikka and freeze that?

Chicken Roast, patties, Haleem, gajjar ka halwa, koftay (for instant lunch/dinner), sometimes prepared qeema for noodles, boiled shredded chicken for sandwiches

I freeze unexpected guests and then get fresh food from them.

Spring rolls
Samosas
Shami kebabs
Peteez
Allo chicken cutlets
Marinated fish

Half cooked chicken or lamb salaans to which u can add veggies later.

Pasta fillings.

I think one of the best things to do is to prepare the basic salan masala, like bhoon onions, add ginger and garlic and tomatoes , masala like salt , chilli, garam masala, turmeric etc .. and bhoon it fully. Then cool it and freeze it.

When guests arrive suddenly , this can truly do wonders, just add boneless chicken to this masala and you get a perfect chicken salan in 20 minutes ..

Also. you can shred veggies like carrots, cabbage, capsicum, spring onions etc ..either mix them or keep them separate and freeze them. When guests arrive and if you need dinner ideas. Take a packet out , stir fry it quickly add in soya sauce, ketchup, vinegar, salt and pepper and boil some rice and mix this into them. Chinese rice ready in less them 15 minutes ..

Also life saver is , every time you make keema , save a serving and freeze it. When guests arrive unexpectedly, you can chuck that keema in the pot and boil pasta and add to it .. It gives you instant pasta salad or proper pasta dish if you add white sauce to this as well.

Does anyone marinate like chicken tikka, lamp chops, fish etc and then freeze it?

I tend to freeze marinated drumsticks, masala for biryani, marinated fish as well.
Another favourite is marinated chicken breast. I marinate it and then freeze in small portions after cutting thin slices of it, my kids like it in sandwiches. I thaw it when needed and stir fry and fill the sandwiches with other filling of choice. Sometimes I simply add this chicken to pasta after stir frying.

We rarely get unexpected guests. Every one calls days in advance before coming. If someone does come to pass something, we have kebabs, rolls, samosay wagaira in the freezer. Mom can also cook up something good in less than hour.

For snacking purposes you can freeze dahi bhalla’s .. like , dont chuck them in the hot water after frying them. And let them cool and freeze instead. When you need them out, let them defrost and add then in hot salted water and then mix yoghurt and add them in. They do fine.

Also you can use cheese and onion mixture , mix shredded cheese with some stir fried onion or spring onion , cilantro and green chillies and spices you like. freeze them in small chunks. Then take them out and use on top of salads or squared bite sized breads pieces along with sauces of choice ..

Don’t depend on these bakeries. Na-Maloom afraad can close these bakeries at any time, without prior notice :snooty:

In this situation when shops/bakery waghaira get closed Kiya koi pagal hai to Ghar se nikle ga ya kisi ke Ghar Jaye ga :stuck_out_tongue:

Any food that can be thawed can be frozen for unexpected and expectant guests.

How do you thaw frozen chicken? I usually put it in cold water to let it thaw and it takes few hours. Is there a quicker way for unexpected guests that doesn’t damage the taste/nutrients?

Best way to thaw is put it in refrigerator overnight but you can use defrost setting on your microwave for quicker thaws. Make sure you use proper settings as mentioned in manual or else it will start cooking chicken.

if in Pakistan, don’t trust those bakeries too much, many programs have shown them to use substandard ingredients and methods to prepare.

Make them yourself and freeze for unexpected guests

Or stir up some eggs/omlette etc and make sandwiches with break and serve with chai
