**Recipe for shahi paneer
**1. 1/2 package Paneer - chopped into 1 inch cubes and fried
until lightly golden
**Masala
**
6-7 fresh tomatoes medium or 1 can of plum or crushed tomatoes (to be pureed)
3/4 inch piece of ginger
4-5 cloves of garlic
1/2 teaspoon whole cumin (sabit zeera)
1/4 teaspoon chilli powder (or adjust higher according to taste)
1/3 cup cashews, remove 10-12 cashews
pinch of black pepper
1 teaspoon salt (or to taste)
Puree all of the above (except the extra 10-12 cashews).
Chop/grind the extra cashews so that they are small chunks and not a fine paste - you want to enjoy the texture of the chunky cashews in the recipe.
1 small onion - finely diced onion
Fry diced onion in oil or butter (saute until pink/translucent)
add pureed masala and chucky cashews and bhoon it until the oil separates.
Add fried paneer to masala mixture. Cook on low heat for 10-15 minutes.
Add half a cup of half and half cream (that’s about 10-12% fat cream) cook for another 5-8 minutes. Et voila! Ready to serve!
So I made this…well, sort of. I didn’t have cashews – thought I did, but I didn’t, but I did have almonds, so I used those. And I didn’t have cream but I did have Greek yogurt, so I used that. I also added ilaichi and javitri…so I guess it wasn’t quite shahi…maybe just vaziri! It was delish anyhow. Served it with kabuli pulao…Yumm!
