Got a recipe? I always think of shahi this's and thats as having a cream and cashew sauce.

**Recipe for shahi paneer

**1. 1/2 package Paneer - chopped into 1 inch cubes and fried
until lightly golden

*Masala
*

6-7 fresh tomatoes medium or 1 can of plum or crushed tomatoes (to be pureed)
3/4 inch piece of ginger
4-5 cloves of garlic
1/2 teaspoon whole cumin (sabit zeera)
1/4 teaspoon chilli powder (or adjust higher according to taste)
1/3 cup cashews, remove 10-12 cashews
pinch of black pepper
1 teaspoon salt (or to taste)

  1. Puree all of the above (except the extra 10-12 cashews).

  2. Chop/grind the extra cashews so that they are small chunks and not a fine paste - you want to enjoy the texture of the chunky cashews in the recipe.

1 small onion - finely diced onion

  1. Fry diced onion in oil or butter (saute until pink/translucent)
    add pureed masala and chucky cashews and bhoon it until the oil separates.

  2. Add fried paneer to masala mixture. Cook on low heat for 10-15 minutes.

  3. Add half a cup of half and half cream (that's about 10-12% fat cream) cook for another 5-8 minutes. Et voila! Ready to serve!

So I made this...well, sort of. I didn't have cashews -- thought I did, but I didn't, but I did have almonds, so I used those. And I didn't have cream but I did have Greek yogurt, so I used that. I also added ilaichi and javitri...so I guess it wasn't quite shahi...maybe just vaziri! It was delish anyhow. Served it with kabuli pulao....Yumm!

Aaloo Paneer

Ingredients:-

½ kg = Potatoes
½ Bunch = Cilantro
4-6 = Green Chili
250 gm = Cottage Cheese
1 = onion (Chopped)
250 gm = Yogurt
½ Tea Spoon = Mustard Seeds (Rai)
½ tea spoon = Cumin Seeds
½ tea spoon = Fenugreek Seeds (Maithee dana)
1 tea spoon = Salt
2 tea spoon = Red Chili Powder
½ tea spoon = Turmeric Powder
1/2 cup = Oil

Recipe:-

Cut Potatoes and Cheese in cubes. Now take 2 pans and pour ¼ cup oil in each . Fry Potatoes and Cheese in both pans separately. When Cheese cubes are golden color fried take them out and when Potatoes are fried , add chopped Onion. When Onion's color is changed to light pink then cover it for 4-5 minutes. Then add Cumin Seeds,Mustard Seeds,Fenugreek Seeds,Salt,Red Chili
Powder,Turmeric Powder and whisk Yogurt. Mix it well and cover it so that Potatoes get tender. When Yogurt's water is dried, add Green Chili (cut from center) and Cilantro and put it on daam fro some time.

Cabbage paneer stuffed parathas
**
**Ing for dough

whole wheat flour 1 cup
salt half tsp
oil 1 tsp

Ing for stuffing

cabbage 1 cup finely chopped
paneer 1 cup crumbled
cumin seeds 1 tsp
cumin powder 1 tsp roasted
green chillies (optional if given for children) 1 tsp chopped
coriander leaves 1/4 th cup chopped
Salt to taste
black pepper (opt)

add flour and salt in a large bowl, adding little water at a time to make soft,
dough. knead dough until it is smooth and elastic. Add oil to coat the dough and knead
little more. the dough will be soft and non sticky.
Set aside covered for 30 minutes.
roll them out thin
tossing the dough in dry flour while
rolling will prevent it from getting sticky

add 1 tablespoon of the stuffing in the center. Gather the sides and bring them
together, press the stuffed dough down. Toss it in some flour and roll it gently applying
just even pressure to roll. Roll it to desired thickness
Put the stuffed parathas on the hot griddle/skillet. Cook for about half a minute,
flip over and add 1 teaspoon of oil in and around the paratha.
Keep pressing the parathas while on the skillet so the dough gets cooked and the
stuffed also gets the heat and gets pressed down into the parathas.
Flip and cook the other side for about 1 minute adding 1 more teaspoon of oil.
Cook until light golden spots appear on the parathas.

Paneer tikka

paneer, cut into (2") cubes 2 cups
capsicum, cut into (2") pieces Half cup
Pine apple (2") pieces Half cup
thick curd Half cup
ginger paste 1 tsp
garlic paste 1 tsp
chili powder 2 tsps
kasuri methi (dried fenugreek Half tsp
leaves)
garam masala Half tsp
coriander 2 tbsps chopped
chaat masala 1 tsp
oil 1 tbsp
salt to taste

Whisk all the tikka ingredients along with the yogurt in a bowl. Add the
paneer, bell peppers and pineapple chunks to the above mixture.

Allow it to marinate for about 2 hours.

Smoking method
Take a piece of coal (about 3 inches) put it on the gas flame.

The coal is hot when it begins to turn red and Grey.

At this point heat a frying pan to medium heat and add the marinated
mixture and toss for a few minutes. Make a well in the center of the
pan, place a steel cup in the center and place the hot coal
inside the cup. Add a spoon of ghee/oil on the coal. It will begin to
smoke. Immediately cover the pan and reduce the heat to low and let it
sit for about 5 minutes.

Open the lid and you will notice the smoke is gone and the paneer and
veggies have got that tandoor/ barbecued/ smoked flavor. The taste is
simply delicious.

Arrange the panner tikkas, bell peppers and pineapple in small tooth
picks which can be individual size or arrange it on a platter as desired
with sliced onions and lemon wedges.

MATTAR PANEER

Ingredients:
250gms mattar(peas),
100gms paneer,
2 big onions,

2 medium sized tomatoes,
1 teaspoon turmeric,
2 green chillies,
2 tablespoons oil,
1 pinch cumin seeds,
butter and salt to taste.

METHOD:
-Cut the paneer into little cubes. Grate the onions.

-Blend the tomatoes, chillies, turmeric and keep it aside.

-Now take a non-stick tava and bring to heat. Then put butter and let it melt. Place the cubes on the tava and shallow fry till the edges start turning light brown.

  • Remove from flame and make tiny holes in each paneer cube. Boil some water and then put the paneer in that to soak. This will make the paneer really soft.

  • Take a pan and pour the oil. Let it come to heat and add the cumin seeds. After they turn golden brown add the grated onions.

  • Sauté till the onions turn golden brown. Then add the tomato paste and cook until the raw small leaves.

  • The tomatoes will then begin giving out oil. Add the paneer and mattar.

  • Stir well. Add a little water and bring to boil. Once its boiling add the salt stir well and close the pan. Keep it on a low flame for about ten minutes.

  • If you want it to be dry then after opening the lid, keep it on the stove and keep stirring till the water reduces and it becomes dry.

-Garnish with coriander or grated butter and serve.

PANEER ki SABZI

Ingredients

Paneer - 200 grams
Tomatoes (medium) - 2
Onions (large)[chopped] - 2
Coriander powder - 1/2 teaspoon
Cumin powder - 1/2 teaspoon
Chili powder - 1 teaspoon
Turmeric powder - 1/4 teaspoon
Garam masala - 1 teaspoon
Cream - 1/2 cup
Butter - 2 tablespoon
Oil (for deep frying)
Oil - 5 tablespoon
Salt (to taste)
Coriander leaves (for garnishing)

Method

  1. Cut the paneer in the shape of cubes and deep fry lightly in oil.
  2. Boil water and put tomatoes in boiling water for 30 seconds. Take out and remove skin.Grind to the fine paste.
  3. Heat the oil in a frying pan and fry the onions till pinkish-golden in colour.
  4. Add the tomato paste and fry until oil starts leaving from the sides.
  5. Add the coriander powder, cumin powder, chilli powder, turmeric powder, garam masala and salt. Add little amount of water and fry for 3 minutes.
  6. Add water and cream. Cook on low heat for few minutes.
  7. Add paneer and butter, cook for few minutes more.
  8. Garnish with coriander leaves and serve.

Palak (Spinach) Paneer Paratha

Ingredients

For the dough (gutha hua atta)
Wheat flour (atta) -1 cup
Salt -1/4 teaspoon
Refined oil -2 teaspoon
For the Stuffing[/h]Finely chopped spinach -4 teacups
Onions (chopped ) - 2
Green chilies (chopped) -2
Crumbled paneer (Cotton Cheese) - 4 tablespoons
Refined oil - 2 tablespoon
Salt - To taste
For Cooking Butter(or Refined oil) -1/4 cup

Method

Stuffing Preparation

  1. Heat the oil in a fry pan and add green chilies, then fry the onions for 1 minute.
  2. Add the spinach and cook for 2 minutes.
  3. Drain the water, if any.
  4. Add paneer (Cotton Cheese) and salt.

Dough (Atta) Preparation

  1. Mix oil and cooked palak in flour, then add enough water to make soft dough.
  2. Make small balls of dough and roll out each portion into very thin 150 mm. diameter rounds.( you can give your own shape as per your choice)

Final Paratha Preparation

  1. Cook on a tawa (griddle) very lightly for a few seconds .Put paratha on it.
  2. Brush the parathas lightly with butter or oil on both side and cook.
