What does Islam says about fasting in places where sun does not set?

Isn’t there fatwa about Ramzan and Eid moon sighting that if you do not see moon in your city/country/region for some weather related reason , then if a group of people from neighboring city/country/region give you shahada of moon sighting you go by that shahada. I guess this fatwa can be extended to situations where you are not able to see sun for purposes of starting or breaking your fast.

There is also a fatwa that for places where sun never sets in summer, you pick a nearest “normal” city. In case of long plane journey, where sun is visible for hours and hours, why cant we use the similar fatwa
