I made one day for leftovers, i.e. on monday I cook chicken, on tuesday daal, on wednesday veges so on thursday I use all left overs from last three days with kabab or some side dish and what I cook on friday, saturday and sunday, it is use as a side dish on monday dinner.
If we see that too much has been cooked for the day, we usually just give it to my sister's in-laws or the neighbors. My BIL does not believe in eating leftovers so we hardly ever have that.
I personally like 2 day old biryani better than when its freshly made... its crazy but somehow it tastes so much more flavorful and yum!
From plain boiled rice - fry it in a pan with spices/beans/dal/onions/egg
From daal - make daal ki roti/paratha, by kneading wet daal into the dough, or stuffing a paratha from dry daal
If it's a lot of veg I whizz it up in blender, add stock or cream to make a soup
leftovers have always been a problem for me ...with leftover rice yeah i do make chinese fried rice...but what to do with the salans..i hate putting them in smaller burtun and then have to dump all of them in the fridge...bcz i myself don't prefer eating basi food..i rather wud love to cook something really fresh chahay sirf saadi daal he kio na ho ..fresh to hoti hai..left over sallun mai mall ki parking mai kaam krnay wallay admiyon ko day daite hon...wo indian/bengali shok say lay laitay hain...!
OOO I just did this one yesterday. I made a desi style bean salad just canned pintos black and kidney beans with chaat masala onion tomato and cilantro. Then the next day when the veges were not so crisp I fried it up with some galic in olive oil. It was delsih!
Another great idea is taking Daal and taking any sort of meat kebab or mean salan (bone-less) and just simmer together it makes almost a haleem type soup.
Another idea is left over vege salan, added to daal and blended with a standing blender in a pan makes for a delish vege soup!
Left over rice and queema can also be rolled into a tortilla to make a burrito with some fresh salsa and queso (cheese) Or fry up left over meat pieces with some bell peppers and onions for a fajita!

I don't know how to cook in lesser quantity so I usually have leftovers. I hate throwing away food that is good and tastes fine so I end up using it somehow.
