What are some aspects of Pakistani mentality that piss you off. Responses from people living in UK, USA and Australia are appreciated.
And how do you cope with your parents wanting you to marry someone from Pakistan when you know you might not get along due to differences in perspectives

Quite abit. For starters;

1. They always think they’re right, even when the facts are facing them dead in the face they flip it and be like “it’s a conspiracy and propaganda”.
2. Everything is haram except for when they do it.
3. Everyone in the pakistani government is a “gudda” but then they go and vote for them.
4. If you are walking with a guy or a girl, that automatically means you’re dating them and doing somethng wrong. As if you can’t just be friends with the opposite gender.
5. Unless you become a doctor your career is worthless.
6. Since we’re muslims, that means if we pray everything will automatically go right for us.
7. If someone has a nice job, house or car it automatically means they are doing something wrong or they somehow don’t deserve it.
8. Gamberling is haram, except for when they do the lottery or invest in shares.
9. Women shouldn’t work and just sit at home and cook fresh food for their husbands, apparently it’s the way to their hearts.

I could go on and on but I would need some bullets and a gun for my head.

With regards to the second part of your question, if you don’t wanna marry someone from pakistan you shouldn’t. It’s actually against the law in the UK to force someone to marry someone from pakistan, and has a jail term attached to the sentence (I think 10yrs).
