I have eaten Okra with Potatoes. It was surprisingly good! They made it with the normal, onions, tomatoes etc like you did Saima but just added some thinly sliced potatoes to it. I would have never thought the combo would work but it did or it could be due to the fact that I love okra :)
My mom has a couple tips on taking away the slimy-ness of okra. Most of you guys perhaps already know these.
1) Make sure the okra is washed and dried before you cut it up.
2a) Add vinegar OR lemon juice along with some salt. Leave for a few mins before adding to the masala.
OR
2b)Fry the sliced bhindis in a bit of oil and then add to the masala.
LBrown: We have used frozen okra at occassion and although i dont like it asmuch as the fresh one, it still turns out fine surprisingly.
Rukhsarbibi, I just made okra in the same manner I described above and added potatoes this time. I sliced them very thinly and it was good. Thanks for the tip. :)
i love okra..we make okra with chicken and beef salan..we also make the one with bhujia style..like chop them up and make them with onion and salt. Also, you can bake them or stuff them with achar masala, boiled egg paste, cheese or keema.
As for using with other vegetables, i wouldn't mind experimenting it with potatoes, or potatoes/carrots/cauliflower.
and one easy recipe that no one mentioned..making them with yogurt, salt and crushed red chillies.
