Wedding menu

We are in the midst of finalizing the wedding day feast for our family wedding this spring in the US. All of us have the same concern, we are sick and tired of the same old menu at every shaadi. The qorma, biryani, seekh kabab, chicken tikka, one sabzi, one salad and dessert. The debate is that the elders say this is a traditional shadi menu but its not the same taste obviouslly as what we eat in Pakistan or India in shadis.
So what is your suggestion. How can we tweek the menu so that its stil glorious but is different. We need to finalize with the caterer by the 27th so input soon is required.

afghan can be very bland .. have to make sure you have chutnies and what not.

the most impressive wedding menu I saw was from an Arabic wedding.
the good was mostly meat but the preperation and organization of the table made it look unbelievable.

my suggestion, please please please pay attention to the decor of the table.
Make sure you have a huge center piece.

For the food, try making something desi but not so normal.
Like rack of lamb, or rahn in urdu (same food, different presentation).

Also, talk to the caterers, they can make the desserts right at the location and that gives the food extra taste and delightful for the eyes.

Muniya i aggree with u completely that presentation is key!
Now about goat or lamb raan, wouldnt that need to be carved and served on the spot?
I know that we must have some thing with gravy or a salan type- so what can replace qorma for that?
Sara halal chinese is great but im in the boston area and there are only two caterers who have permits to work with the marriott hotels and neither of them offer chinese so we dont want to take a risk.

But here is a serious suggestion...Shaljam with beef. My favorite and very rare in shadi's.

Shaljam gosht is yummy, there is a dish called shabdegh where the shaljam and gosht are cooked over night on low heat with masala similar to qorma- its amazing!
Problem to consider- turnips cause gas~ not very pleasant in a hall of 500 people.

SM: the rack of lamb is very tender, its usually not a problem for people to cut off pieces themselves.

For the salan, I don't think that this is avoidable. :(
but you can dress up the rice with shredded carrots and raisons(sp)

I am not sure where the wedding is going to be but here it is.

We will have about 2 sets of 5 tables.

1 table will have regular pakistani food
2 table will have italian food
3 will have chienese food
4 this will be consider as a bbq place. We can have a live huge grill where people would come by and take whatever they want. bbq place -ofcourse have waiters stand near by etcto sevrve
5 with be all vegetables. [assuming wedding is in usa etc i am sure you will have some guest who are vegetarians ]

1st table we can have. something different.
a-rice with small mini koftas
b- chicken ke kabab but not long - mix with onion and tamatar to keep them moist
c-

2nd
a spinach dumplings with chicken
b c and d could be different types of pasta…

3rd
you know what you want for chinese.

4th i told you

5th one will be compeletly vegetable. 1 daal dish, 1 vegetable koofta dish, 1 rice, and 1 alo ke kaab

Now this shouldnt be expensive at all other than the 4th one. You can keep only 3 dishes on each table or even 2 it should be just fine it will have variety.

Its winter dont keep icecream for desert.
Lets go wild and have some really good cakes or our desi falooda… something different

Nia that is incredible! I will share this with every one concerned this weekend and hopefully we can come to a decision. I love the grill idea, though i dont think the hotel would allow a live grill in the reception hall- aaah that is where is miss Pakistan most. TIkkas hot off the coals... yummm

Ok i thot abt it… i’d like to have 1 table with appetizers: samosas, chicken ke pakoray and raita (my moms style with tomatoes, yogurt, onions, those choti choti pakoriyan)..

I not a big fan of desi food.. i hav this thing, if it’s NOT cooked by my mother it is not good enough for me :snooty: But chicken pulao, chicken makhni, and chkn biryani.. I’d rahter have halal non-desi (italian and/or chinese) food.. lasagna :yummy: sesame chicken, chicken stir fry, KFC style chicken .. salad (lettuce, tomato, cucumber) with ranch or italian dressing… For desserts, gulab jamun, cheesecake, ice cream., fruit salads..

These r all things i like.. :wink:

You know when I was in Pak, I went to this one wedding where.. they served shorba on a PLATE WITH gulaab jamun on teh side :rolleyes: And if that wasn’t bad enuff, we left the wedding and some Shiithead had pretty much thrown an entire bowl of chicken karrahi on the floor !! :mad2:

If I ever come across that stuff at my wedding, i will personally march over there in my lenga and grab them by their freakin hair and push them to the floor nad make them eat that perfectly good salan! There’s ppl outside BEGGING for food and that’s what dheet ungrateful pricks do :mad:

^ Yea some ppl at weddings in Pakistan waste so much food! :frowning: They shudn’t put so much in their plates in the first place :mad:

U can have a variety of different foods (as nia_khan described). That’s how most weddings r in America…the ones i’ve been to had dishes from different countries as well as Pakistan, but that’s bcos they also had a lot of non-Paki guests. But since ur tired of the traditional dishes, add some non-Paki dishes so there will be a choice.
