If you want performance, and better operation time go with 64-Bit version of windows.
But make sure your CPU/Motherboard supports running 64-Bit OS.
I've only used Ultimate from the beginning, so besides it having extra features, i'm not sure if it has any performance perks. My hunch is that the major difference between different editions is the perks/features that come loaded with OS (home vs. ultimate vs. business, etc.) and not necessarily performance.
