Veggie recipes

Hubby’s a veggie-eater i eat mostly meat…which means that i have to eat more veggies too. So need some new nice ideas, desi and non-desi…only thing we dont eat is eggplant. Okay thankooooooooo :help:

Above is a link that can be quite handy and useful. It’s a website of a very well-known Indian chef whose name is Sanjeev Kapoor. I’ve experimented on several of his recipes and all of them turned out awesome. So you may want to give some of his veggie recipes a shot.

I love taht combo, mystical. I usually add a bunch of other veggies too, like gobhi, shimla mirch towards the end etc. Totally yummy!

I just lightly fry 2 medium sliced onions until they turn pinkish, add 2 medium tomatoes and salt and red chilli powder. When tomatoes have mushed up, add the mushrooms packet and cover and cook on med until tender. Stir frequently. Garnish with cilantro. Yummy with rotis.

W/ the exception of the beets and turnips and mushrooms, i’ve made most of these salans… So im more leaning towards non-desi but ooh mattar paneer! wanna try that :yummy:

spinach pie... it is just out of this world sara!

INGREDIENTS:
1/4 stick butter
1 onion, chopped fine
2 lb fresh spinach leaves, washed and chopped
salt and ground black pepper
1 lb puff pastry
1 little melted butter
10 oz feta cheese,
cubed 1 egg yolk, for brushing

1 Melt the butter in a large skillet, fry the onions until soft, then add the spinach. (It may seem quite a lot to begin with but, once cooked, the spinach will reduce.) Cook for a few minutes, stir in seasoning to taste, drain, and set aside.
2 Preheat a 375 F oven. On a floured surface, roll out half the pastry as thin as possible to line a 12-inch square, deep ovenproof dish. Brush the dish with a little melted butter and sprinkle with flour. Line the dish with the pastry and fill first with the cheese cubes then with the spinach and onion mixture.
3 Roll out the remaining pastry to a square large enough to cover the dish, place over the filling, and seal the edges with a little water.
4 Brush the pie with half the egg olk and cook in the oven for 25 minutes, until nicely browned. Remove from the oven, turn the pie over and brush again with the remaining egg yolk, then return to the oven for 20 minutes more. Serve hot

Remember the mushrooms should not get overcooked, but the excess water should dry up.

i wanna make aloo mattar paneer, recipes quick? :help:

Paneer/Mushroom Jalfrezi

200gm paneer
10 whole mushrooms
sliced onions (2)
chopped tomato (1)
oil. salt, red chilli, vinegar, tomato paste

Saute the onions till transparent add the tomato (or paste) and cook till the oil begins to seperate add the chilli, salt and 1 tablespoon of vinegar... add u're mushrooms and fried paneer.

It is "desi" but I love it since Im a vegetarian =)

I don’t have aloo matter paneer but have the recipes of palak panerr and mattar paneer. let me know if you require them.
