Veggie Biryani

Re: Veggie Cooking

what's the recipe for the soup?

Re: Veggie Cooking

This particular one was made from pre bought organic veggie stock.
In a large pot add stock, all the veggies you like and season to taste. I added oregano and some soy sauce. Some hot sauce to the bowl when ready to eat.

If you aren't as healthy, there is another on that ammi makes.
Add a pinch of oil to a soup pot, simmer in some garlic. Add water and tons of your favorite veggies. Let cook until veggies are hald cooked. Add Tomatoe Puree until you get the desired consistancy. Add Salt and black pepper to taste.
Cook until the soup looks like one and has a good consistency. Add hot sauce in the bowl to taste. :)

Re: Veggie Cooking

Taffy: If you know how to make meat biryani just substitute the veggies for the meat. Do add extra tomatoes though.

Re: Veggie Cooking

1 head of Cauliflower (Gobhi) (broken into florets)
A pinch of Ajinomoto Salt
Cooking Oil (for deep frying)

2 tbsp. Spring Onions (finely chopped)
1 tbsp. Garlic (Lehsan) (finely chopped)
1 tbsp. Ginger Root (Adrak) (finely chopped)
1 tbsp. Green Chillies (Hari Mirch) (finely chopped)
¼ tsp. White Pepper
1 tbsp. Corn Flour (mixed with ¼ cup of water)
¼ tsp. Sugar
A pinch of Ajinomoto Salt
Salt (to taste)
2 tbsp. Soy Sauce
1 cup Vegetable Stock
2 tbsp. Cooking Oil

½ cup Refined Flour
¼ cup Corn Flour
¼ tsp. Chilli Powder
Salt (to taste)
Water (as needed)

1) Wash the cauliflower florets, sprinkle a little salt and ajinomoto and set aside for 5 minutes.

2) Combine together the: refined flour, corn flour, chilli powder, salt and water as needed. Beat well and prepare a thick coating batter out of it.

3) Heat the oil in a frying pan. Dip the cauliflorets one by one in the batter and deep fry. Drain when golden brown. Set aside.

4) Heat 2 tablespoons of oil in a pan. Add the spring onions, ginger, garlic and green chillies. Fry for ½ minute. Add the stock, pepper, soy sauce, sugar, ajinomoto and salt. Simmer uncovered for 1 minute.

5) Add the cornflour mixed with water and stir continuously, so that the sauce becomes thick. Add the fried cauliflowerets just before serving. Garnish with spring onion tops.

*Ahmed bhai, I did have to change this up a bit. I used less salt and more sugar. Do try it and let me know what you chnage about it. *

Re: Veggie Cooking

Thank you!!!!

Just a few questions:

1) what's refined Flour, just regular flour I get from Indian store?
2) The chilli powder is the regular red chilli powder right? Just making sure.
3) The batter made in step 2 is only being used in step 3, and not being used in step 5, right?

Re: Veggie Cooking

1)Refined flour, is what you get in the American Grocery Store
2) yup
3) the batter will be used to dip the gobi in and deep fry it. Will not be used for anything else.

Re: Veggie Cooking

Ok great! I will make it this Friday and post a pic if it turned out good.
