I’ve decided to go vegan this month …
Lets concentrate on healthier options if possible but if not i’d still love it if U guyz can share all the veggie delites that U concoct in ur kitchens !
If you really want a healthier option here is one meal I make once a week and we all love it.
Steamed veggies and brown rice
Get an assortment of veggies and chop them all up. I use all, most or some of the following (depending on what is available at home)
Carrots
Potatoes
Peas
Cauliflower
Broccoli
Butternut squash
Sweet potatoes
Courgette
White onion
Baby corn
Chinese cabbage
The thing about steaming is that you need to know which veggies cook faster than the other.
I usually start off with carrots and peas and baby corn.
After 5-7 mins I add potatoes cauliflower and sweet potatoes and butternut squash.
About 10 mins later broccoli courgette and white onion.
Steam for 5 mins.
Switch off steamer and add chinese cabbage.
After 5 mins serve with brown rice (gives a wonderful, nutty flavour).
I add salt, cracked pepper, red onions, coriander leaves and green chilles (all finely chopped) and a dash of olive oil and any kind of seeds like linseeds (flaxseeds) sunflower pumpkin seeds etc and mix all well and enjoy.
Can I ask why you are going vegan instead of vegetarian? You should take care in vegan diet you may miss out on protein and iron
I'm just gonna be vegan for a few weeks primarily because i never did like milk or eggs anyways !
but this isn't a long term decision , so probably gonna add fish n chicken to it in a few weeks ,but its just to start a healthier lifestyle and eat healthy !
Chop 3-4 carots in tiny cubes , chop two potatoes in tiny cubes, and you need half a cup peas ..
Preparing the masala: fry finely chopped onions, fry it in one teaspoon olive oil, once onions turn reddish, add ginger garlic paste and then about half a can of tomato ..
fry until the tomatoes reduce to a pulp.. then add half teaspoon haldi / one and a half teaspoon red chilli powder / one and a half teaspoon salt ...
add the chopped carrots .. and half cup water .. cover the pot and let it cook on steam mostly.. after about 20 minutes , add the potatoes and again in 10 minutes add the peas , the green chillies finely slices and some fresh corriander ...
You can also try Spinach potato ... its really tasty as well and pretty easy to make :
fry the chopped onions until brown , add in ginger garlic paste , and then add the spinach ( one large can should be enough ) ... add the regular masalas ( haldi, red chilli. salt ) and let it cook on medium heat .. cover the top.
when the water dries ( should take about 25 minutes ) add the potatoes and let them cook , keep the pot covered .. add green chillies ( I also add some frozen methi , just about two tablespoons at the time when i add the potatoes , it just enhances the taste )
