I found this vegetable pulao recipe on a little scrap of paper in Urdu. I remember she used to often make it for us to eat after school. It was so yummy with raita. She doesn’t list any amounts expect for rice. I can’t cook without a precise recipe:teary1:. Can you please help me fill in the blanks?
-cook a little
-add ___vegetables and ___potato (she mentions potato separately)
-cook until potatoes are half done
-add water and when boiling add rice

So I made it following CB’s suggestion and added some spices from a tahiri recipe in the aaj kyaa pakaya thread (blue). I’m sure mom didn’t add haldi, but I like to add it whenever I can. I think she added saffron to give coloring and flavor. I also added paneer and nuts. The only change I would make is to decrease the cumin to 1.5 tsp.
MY FINAL RECIPE:
-soak 2 cups rice
-saute one Large or two medium sized , diced onions
-add half tsp each of garlic ginger paste
-add half cup of pureed tomato (2 medium)
-add:
2 and a half tsp salt
half tsp chili powder (for mildly spicy)
1 tsp garam masala
1.5 tsp zeera
1 tsp coriander powder
1 tsp haldi
1-2 bay leaf
-cook a little
-add two cups of mixed vegetables/paneer/nuts and two medium sized potato, cut small bite size cubes (she mentions potato separately)
-cook until potatoes are half done
-add 4 cups ( will add slight less next time) water and when boiling add rice

Any suggestion on how to make this recipe with brown rice? I think I’ll have to parboil the brown rice separately before adding or the vegetable will be overcooked.

Although it depends on the quality of the Brown rice , some do take ages to cook .. but my friend makes Brown rice pulau and she doesnt separately boil the rice. infact uses the same recipe for basmati and brown rice ! and rice do turn out really well.
Why dont you give it a try with this same recipe and if vegies get overcooked then you can preboil the rice a bit maybe ?
