Do you want to make desi dishes or non-desi? Are the guest hard-core vegan? Do they consume dairy and eggs?

1) Rice (brown rice with boiled chick peas....OR.....white rice with green peas......OR.....rice with mixed vegetables)

7) Malai kofta.....vegetable balls in creamy gravy
8) Instead of kababs.......how about potato cutlets

11) Mixed medley.............cook mixed vegetables (carrots, peas, potatoes, peppers) in masala/curry
12) Spicy potatoes (basically diced potatoes in spicy gravy)

Bhindi Masala
Ingredients :
Bhindi 1/2 kg
Haldi 1/2 tsp
Garlic 1 tsp
Kolonji 1/2 tsp
Chilli powder 1 tsp
Oil 1/2 cup
Salt 1 tsp heaped
Onions 1 fried light golden
Tomatoes 4 finely chopped
Green chilies small ones whole 4

1-Fry bhindi in oil till slightly brown.
2- Than in the same oil fry garlic, salt, Chilly powder and haldi bhuno by adding in little water and add chopped tomatoes cook on slow fire lastly add in fried bhindi, green chillies and brown fried onions than leave it on dam for 10 minutes.
3- Now its ready to serve

**Cabbage Tomato Curry
Ingredients:**
1 cabbage whole
1 onion finely chopped
2 small tomatoes or 1 big
1/2 ginger garlic paste
1/2 tsp turmeric powder
1 1/2 tsp Red chilli powder
1 tsp /var/www/hin seeds (zeera)
2 1/2 tsp /var/www/hin-Coriander powder (dhaniya-zeera powder)
Oil
Coriander
Salt.
**Method:
**1-Cut the cabbage into small pieces. Tomatoes should be cut finely into small pieces.
2-Take 1 tablespoon oil into a frying pan.
3-To this add Jeera seeds, mustard seeds, ginger garlic paste, turmeric and when they splutter add the onions and let them fry well. Add cabbage to it and fry it nicely.
4-Add Water if required and let it cook well. Then add the tomato, mix well.
5-Then add jeera-coriander powder and salt to it. Leave it, to cook for a while.
Garnish this with coriander .

Channa Masala**
Ingredients:**
Chick peas 2 cups
Onions 2 nos chopped
Tomatoes 2 nos chopped
Green chillies 2 nos chopped
Groundnut oil 1/4 cup
Red chilly powder 1 tspn
Garlic paste 1 tbspn
Ginger paste 1 tbspn
/var/www/hin powder 1/2 tspn
Garam masala powder 1 tspn
Salt use as required
Lime juice 2 tbspns
Yogurt 1 tbspn
Cashew nuts 1/4 cup
*Method:

1. Soak the cashew nuts in water for 1 hour. Drain and grind to a paste in a blender. Keep aside
2. Soak the chick peas in water for 1 hour. Cook the chick peas in a pressure cooker till three fourths done. Remove and keep aside.
3. Heat the oil in a kadai. Add the garlic ginger paste and fry for a few seconds over a medium flame.
4. Add the onions, red chilly powder, green chillies, tomatoes, garam masala powder, /var/www/hin powder and the salt.
5. Fry over a medium flame stirring continuously till the oil starts to leave the mixture. (ie the oil gathers on the sides of the kadai)
6. Add the chick peas, cashew paste, yogurt and a little water and cook till the chick peas is cooked and the gravy is thick.
7. Remove from the flame and add the lime juice.
8. Serve hot garnished with the chopped coriander leaves.

**Palak Paneer
***Ingredients :*
Spinach (palak)
Green chilies
Onions
Tomato
Ginger
Garlic
Dhaniya (coriander) powder
Red chili powder
Salt
Sugar
Cream
Vegetable oil Palak Paneer
Method:
1. Chop the palak and boil until it gets completely soft. Add little bit of water as spinach discharges lot of water while boiling.
2. After boiling put the entire palak with the boiled water (as the boiled water contains the nutrients) into a blender. Then blend until it becomes a fine paste.
3. Then make a paste of onions, tomato, green chili, ginger (small piece) and garlic (4 to 5 cloves).
4. Then take oil in a karahi and add the above onion paste and fry it under medium flame for 7 to 10 minutes. Then add the palak paste to the karahi and fry it until the smell of palak goes off.
5. Then add dhaniya powder, red chili powder (as per ones own taste), 1/2 spoon sugar and salt. Then mix the entire thing and boil for another 5 minutes.
6. Now before serving, take paneer cubes and fry in little bit of oil so that it turns little bit golden brown. Then add these paneer cubes to the palak gravy and boil it for 2 to 3 minutes.
7. Before serving put cream on the palak and serve with Paratha, naan, chapatti

Jalpari..........spiced potatoes is fairly easy to make.
You can adjust the quanity of the ingredients according to your needs. But basically my mom and I peel some potatoes and chop them up into small pieces.......more like small thin slices (not too thin though). Also chop up one medium sized onion.
Start shallow frying the potatoes and the onions until transluscent. Don't brown the onions. And then in a container.......mix some yogurt (1 cup) with 1 tsp garam masala, 1 tsp chilli power, 1/4 tsp turmeric, ground corriander to taste. And then add the yogurt with the spices to the potatoes.......and stir. Add cumin seeds and chopped green chillies according to taste. After a few minutes the yogurt and spices will form a gravy. And as with most dishes, when the oil rises to the surface, you're done.
Taste the potatoes to make sure they're tender and cooked all the way through. If they're a still a bit hard.......you can a little water and cook until they soften. You can add cream to thicken the gravy if you wish.
We don't add garlic and ginger or tomatoes to this dish, but some people do. People vary in how they make it. It's basically potatoes with curry.

Sauted mix vegetables (bell pepper, zuchini, potatoes, string beans, corn, onions, tomatoes, egg plant, and green chilli) Just saute them in oil, salt, italian seasoning.
if you want carb with it make noodles in a rich red sauce.

Malai Koftay:
Koftay:
50 gms khoya and 50 gms paneer
2 big potatoes
20 gms raisins and cashews
2-3 green chillies chopped
1/2 cup dhania chopped
1 tablespoon cumin seeds
Boil and mash the potatoes, add the paneer, cumin seeds, dhania and chillies. Stuff them with rasins and cashews and make into small balls and fry.
Gravy:
100 gms paneer
150 ml cream
50 gms cashew nuts
1 teaspoon grated ginger
1/4 tsp nutmeg powder
1/2 tsp haldi
2 teaspoons sugar
1" piece of cinnamon and 4 cloves.
2 tablespoons ghee
Roast the cinnamon, cloves and nutmeg and dry grind. Grind the other ingredients too except for the ghee. Heat a wok and fry the ground spices, add the paste and fry for 10 mins. Add 2 cups water and let the gravy simmer.
Place the kofta's in a serving bowl and pour over the gravy.

Giny Piny - how dod you make Haray masalay key allu mattar?
1 medium onion
3-4 green chilli's
1 bunch green dhania
2 tablespoons crushed black pepper
1 tablespoon powdered zeera.
In a pan heat oil and add to it all the above ingredients blended/pureed together with a little water.. add-n cubed potatoes and salt. Cook till the potatoes are done and oil seperates from the gravy. Add-in u're peas.. Lots of people add hard-boiled eggs to the gravy as well.
