vegetable-based dinner ideas?

I am really trying to eat healthier and cut back on the meat and eat more vegetables. Only problem is, I really dont know what to make for dinner that doesnt have meat in it! The other day I thought and thought about what to make and then finally made black-eyes beans (which turned out really yummy!) and only realized later than beans arent even a vegetable :smack: But its a plant at least, so still good!! When I went grocery shopping this week my mission was to buy lots of vegetables, but I seriously didnt know what to get. I ended up just getting a bag of potatoes, veggies for salad and 2 more cans of beans!

So please share some YUMMY and HEALTHY vegetable-based dinner ideas!! My goal is to have ideally at least 1-2 dinners a week that doesnt have chicken/beef/seafood

black eyed beans are indeed delish. Also nice are adzuki beans.

Well there are loads vegetables, you know them already, caulifour, aubergine, okra, mix vegetables(carrots/swede/peas), mushrooms(not vegetable but still good), mixed bell peppers. Im vegetarian so i add some sort of protein in the meal such as beans/pulses or quorn mince or tofu.

Also the frozen vegetables and cans are good as you dont have to worry about them going off.

what is quorn mince? and i have heard a lot about tofu..how does it really taste like? i love paneer (cottage cheese) but dont know about tofu taste...

tofu is good if you fry it or bake it so it goes abit crsipy, not so good if you boil it. paneer is good too.

Quorn is a fake meat product made of mushroom fungi i think. U can get mince, meatball, slices, burgers, sausages etc. Not all of them are good tho. Linda mcartney sausages are good. Asda vegi-burgers too.

Ya thats the trouble, I know them, I just dont know what to do with them! Recipes please! Mushrooms, bell peppers, mixed veggies etc I always use them whenever I can by adding them to my meat or pasta dishes. I just need to learn how to make vegetarian dishes as well, so Im not always eating meat

Ya, frozen veggies I can work with! I always add them to rice, keema etc. I guess they arent as healthy as fresh, but Im trying to do my best!

U can make vege biryani, vege kerhi, mix vege jalfrezi, fried okra, okra in achar masala, baked veges, vege pizza, vege soup and vege pie.
In all these dishes I use, potatoes, onion, bell pepper, carrots, cauliflower, peas, zuccini, loki and celery in different combinations.

Some time I use veges in combinations with seafood like shrimp like vege+shrimp biryani or vege+shrimp jalfrezi.

My family is opposite; we eat veg almost everyday.

Ideas:
-quesadillas (blackbeans+corn+cheese+tomato+masalay in a tortilla)
-falafel (falafel patties+lettuce+tomato+tahini or yogurt sauce)
-stirfry (any assortment of veggies+some tangy/mirchy/salty sauce) over rice.
-Lots of indian food ex. saag paneer, veggie korma, etc

M.E, my mosttttt favorite vegetable is bhindi (okra)!! It's sooo yummy whether you eat it with roti or daal chawal. It's so simple to make also.. I have tried it with different recipes and it turns out great each time. Fry some onions, add zeera, salt, red chili powder, haldi and bhindi. Add tomato when bhindi is almost done and let it cook. I also tried it using a recipe Niksik had given me (with no onions, just zeera and coriander) and it was sooo good. And SGC gave me another recipe that turned out yummy as well.. lol.

Also, you can make matar paneer, aloo anday ka salan, aloo matar, paneer makhni, spinach, and so many more. Let me find a good website that has desi vegetarian dishes.

hm..you can try vegtable fried rice !
it comes out good every time i make it and its really easy. I use two entire bags of Mixed vegtables and about 12 eggs.
very healthy if u dont use to much oil !

Shay- I love bhindi too! My hubby does not :( His dad used to make it a strange way so maybe thats why, so I will try your recipe out
