In a big pot add a tad bit of oil and throw in some garlic. Let sizzle add frozen veggies (I stick to sturdier ones such as carrots, corn, peas - these usually come in combination bags). Add about 1-2 cups of tomatoe puree and equal amounts of water. Salt and Balck pepper to taste, some hot sauce to taste. Let soup thicken over medium flame, usually about an hour or so.

Hummus: **
Add 1/4 cup olive oil, 2 cans canned chick peas (with half its liquid), one clove fresh garlic, lemon juice to taste – blend until you get desired texture.

sanwiches: **
Start with whole grain bread, spread both slices with pentiful hummus, add sliced round tomatoes, lettuce (or baby spinach leaves) cucumber slices preferably with the peel on for extra crunch.
