Veal Schnitzel

Anyone have a fail-safe recipe???

Schnitzel is pretty simple. Can't remember where i got this recipe from, but i serve it with a potato salad or mash with basil pesto.

**Ingredients:
**Veal fillet
Plain flour - 3 Tbsp, seasoned
An egg - beaten
White breadcrumbs - about a handful
Butter - 25g
Olive oil - 1 Tbsp

*Instructions:

- Wrap the veal fillet in cling film and give it a good ol' bashing with a meat cleaver or rolling pin. Take the cling film off.

  • Sprinkle flour on a flat plate. Put the veal in the plate. Coat the veal with the flour

  • Dip the veal into the egg and then into the breadcrumbs

  • Heat the butter and oil in a frying pan over a medium heat. When the pan is hot, put the veal in the pan and fry for around 4 minutes on each side, until crisp and golden brown.

Oh, you can also put parmesan into the flour mixture....

I will give it a try later this week.

I assume that a veal parmigiana recipe would be similar....
