Schnitzel is pretty simple. Can't remember where i got this recipe from, but i serve it with a potato salad or mash with basil pesto.
**Ingredients:
**Veal fillet
Plain flour - 3 Tbsp, seasoned
An egg - beaten
White breadcrumbs - about a handful
Butter - 25g
Olive oil - 1 Tbsp
*Instructions:
* - Wrap the veal fillet in cling film and give it a good ol' bashing with a meat cleaver or rolling pin. Take the cling film off.
Sprinkle flour on a flat plate. Put the veal in the plate. Coat the veal with the flour
Dip the veal into the egg and then into the breadcrumbs
Heat the butter and oil in a frying pan over a medium heat. When the pan is hot, put the veal in the pan and fry for around 4 minutes on each side, until crisp and golden brown.
Oh, you can also put parmesan into the flour mixture....

I assume that a veal parmigiana recipe would be similar....
