Got the recipe off the net :D ... Here goes ...
*Fruit Chaat *
*Ingredients: *
6 oz. canned guavas, drained
6 oz. honey dew melon
4 oz. pears
4 oz apples
4 oz tangerines
1/4 tsp cumin seeds, crushed
pinch chilli powder
pinch finely ground black pepper
2-3 tbsp sugar
2 tablsp fresh orange juice
2 tsp lemon juice
fresh mint leaves, crushed or broken, as garnish
*Directions: *
Cut up all fruits into small cubes or tiny segments so that the spices can mingle into fruits easily. Mix all spices togather in a bowl, pour in sugar, orange and lemon juices,stir and shake the mixture to blend them. Pour over the fruit, mix gently, garnish with mint leaves and chill well before serving.

who needs that? cut the fruit into slices and mix it with a bit of sugar!
There are some other chaats I know of.
One is Kawli/Kabli (not sure which ones correct) channay chaat .. reeeeeeeally spicy .. has spices literally poured into it..has its origins in sindh I think .. dont try it after staying hungry for a whole day as in when fasting ..you might be in for some trips to the bathroom ..
and then we have another chanaa chaat .. which aint that spicey .. has aloos and chanaa boiled with imli ki chatni ![]()

Recipie:

i've seen ppl. add chickpeas (boiled ofcourse) and imli ki chutni
to fruit chaat and it really tastes good (don't overdo it though).

Hampf, for me dhahi baRi, aloo-channa, dahi-boondi etc belong to chaat category. So here we go:

------------------Chana-paneer chaat.
Channa 2 cup,
paneer 1 cup (feta)
cucumber, cut in small squares
Tomato, cut in small squares
1 onion, finally cut
chaat masala
lemon / imli
fresh coriander leaves
Method:
Mix everything in a bowl, and serve. You can also serve this on a pappadum with fresh poodina chutney.
---------------------Dahi poori (I think they showed this on ptv, iftar transmission)
Make your normal pooris (golgapa style, you know the recipe right?)
Channa,
Yougurt
imli chuty and poodina chutney
coriander leaves.
Method:
Mix masala in yoghurt.
Make holes in pooris, fill with channa, pour the other ingredients and serve.

2 Tomato cut in ahem boats
3-4 potatoes cut in thin boats
1 finally cut onion
2 cup channa
fresh coriander leaves
chaat masala
Imli / lemon
salt and red chilli powder acc. to taste
Method:
Mix everything and serve
----------------------Dahi bhaRe chaat
For those ball things.
½ cup very fine channa ata, unless you gonna make your own, good luck in case you do :p
½ tsp baking powder
zeera, coriander, salt, red chilli and methi powder according to taste.
For dhahi.
Imli,
2, tomatoes cut in fine rings,
1 onion, finally cut (rings)
a few green chillies
fresh coriander,
½ cup Chaana (I like them in dahi bhaRe)
½ cup boiled potatoes, cut in square
Chaat masala, red chilli powder (optional), salt
Method,
For dahi mix everything expect onion and tomato and put aside, dahi should be rather patla.
For bhaRe,
Mix all the ingredients and make a smooth bather. Consistency should be hmmm thicker than pancake. Let it rest for 10 min. The more you beat this thing the better the bhaRe.
Deep fry the bhaRe on medium heat. Use two spoons to make the round shape.
Put them in cold water as you take 'em up.
Squeeze the water.
Now, put a layer of dahi, arrange the bhaRe, arrange tomato and onion, and pour rest of the yoghurt.
Garnish with imli water, fresh coriander and green chilli.
That should be enough for today, I can make up more if needed, let me know :o

After Poodenay ki chutney have a glass of ENO or karmina ......will solve all digestive issues. :)
