I find this group very helpf
ul. I have a question if someone can guide me. I want to use tortilla with halwa chana brunch but the problem is whenevr I deep fry tortillas they become very hard and paapar like. I take a lot of oil, make it really hot and then I fry the tortilla (the uncooked one)
What am I doing wrong?
Erm.. puri and tortilla are two completely different things. Tortillas are already cooked. U need fresh dough to make proper puris. I think the dough for puris is also quite different... mixture of semolina and plain flour. Anyway... puris are made with fresh dough.
Oh u said uncooked tortilla - never heard if those... but anyway it's probably made from corn. Which gets hard when it fries. That's how u get crispy corn chips/tortillas. And again.. i'm pretty sure puri dough is very different from torilla dough which is plain flour.

Flour tortillas make the best puris! That's the what we've been doing it in my family for years, and if you follow all those desi foodie groups in Facebook, plenty of ladies are doing the same!!
1) make sure you have FLOUR tortillas, not CORN tortillas!
2) oil temp is important, so make sure it's too hot (you don't want pappar!), if it's not hot enough they get soggy
3) use your tongs to dip the tortilla into the oil and then let it go and flip it from side to side as it bubble ups and inflates, and then take it out and drain on a paper towel lined plate. The whole process only takes seconds.
4) I don't know where you live but if you have a Kroger, they make fresh tortillas and those are the best ones I've found

I use flour tortillas too for puris! They're perfect!

the trick is to have really fresh tortillas....if they are stale they will not puff up.

Yup,I always use medium sized fresh flour only tortillas from my local grocery store and I have never had any issues.I have tried a few other brands but always found the generic ones from my grocery store to be the best.And the oil temperature makes a lot of difference.If it is not hot enough,they fried tortilla will never become paapar-like.
Toba. This thread is a showcase of how non sughar our ladies are. Whatever happened to making puri from scratch, like your MIL does.

hi ladies. i brought flour tortilla from walmart. brand name is massion. it came out little sweet. can you guys recomand me which brand should i use.

my mom makes it. Nothing special, just deep fry it

Oh, I even use ones from Aldi. And made sure those are not the large size ones. The small size ones fry the best. I used to make puris from scratch and then realized that everyone else was frying flour tortillas and those tasted just like puris. Work smart, don't work hard!

Flour tortillas make absolutely-best-painless-puris.
We have used booth cooked ones (from Walmart) and uncooked (from COSTCO tortillaland tortillas) and both ended up good.
Just make sure you are not taking corn tortillas and we layer puris in hot-pot with half paper towels b/w each 2 puris and it comes soft.
Specially if you are inviting few guests for halva-puri breakfast, these puris comes really handy.

If the oil temp is too low, they will just be limp and greasy...if it's too hot they will become tortilla chips/pappar lol....you have the right oil temp when the tortilla billows and puffs up as you slip it into the oil
