ok I just made the mixture of chapli kabab but I will not be making kababs until Thursday.. how do I freeze this mixture without risking the watery texture or soggy kababs when I thaw it on Thursday? Please do remember that it includes raw onions, tomatoes, egg etc!!
I believe the best way to freeze meat/beef is to wrap it in cling wrap and then freeze it in airtight container. Ive done that for parties before and the beef came out fine.
LOL no qeema had been sitting in fridge since Sunday nite so I had no choice but to do it today...well, Thursday is a pizza night so I dun think I will be making kababs until the weekend :$

I also usually do not have enough space to freeze them altogether ...so I freeze them in batches...

try freezing them as Reha said...Hopefully should be fine...
gem....i usually prepare the mixture with raw onion n all n freeze it. it does get soggy after defrosting so i add cornmeal to it...(i dun add cornmeal initially which normally ppl do) another way is i fry them n freeze

You don't need much room.. just cut plastic bags according to your plate's shape
Oil the plate a little put a layer of kebabs on it, then your plastic bag piece or cling film, brush it with oil, then kebabs again...
Basically you layer kebabs in one plate but separate them with *oiled *cling film so they don't stick together and are easy to separate when you take them out.
well I did what Reha said, when I take them out I will do what Afia baji said.. by the way, is corn meal same as corn flour? and how much should I add?

are you in the UK GTG ? if you are then let me tell you NATCO do cornmeal .... you might wanna look for it in ASDA and Tesco.... Though i think i bought it from a desi cash and carry .. but NATCO is a huge company ...
