I think script made the difference
I think the difference is not limited to reading and writing, the people who follow this distinction try to avoid using words from other language in their conversation.

Like Ninja said, the script made a difference. Hindus( the common man not literary scholars) already had a working script and spoken words in other languages and were not ready to adapt the arabic script for writing or anything arabic/persian for conversion which they saw as a foreign imposition forced on them by the muslims rulers. So Urdu gained a reputation as a muslim language.
