Unbelievable!

No one has by far posted a shrimp biryani recipe! I searched and searched and searched some more but nope, none! Bro ne farmaish ki hei so if any one has a tested recipe please do share. Though I have no idea how I am going to touch the shrimp with my hands :bleah:

my first ever sent PM on this website was this recipe ....i still had it in my mail box....so here u go...
and i have made it a lot of times and it turns out good...:)

for the shrimps=
in a pan heat some oil and fry 2 medium onions in it till golden brown.
then add 2 chopped tomatoes
2-3 tbsp yogurt
ginger
garlic
spices(salt,red chillies,zeera powder,coriander powder and haldi...if u use it)
then bhoon this masala,when all ready add the shrimps and bhoon them a little.....dont overcook as they will get to chewy then
(u can use either type of shrimps.....pre cooked type or the raw ones.....does not really matter)
when the shrimps change their color the salan is ready.

for the rice=

for one pound of shrimps i use 1 glass of rice but u can use more or less whatever u like....

boil some rice.
while boiling add to the water the following
salt
crushed ginger and garlic(half tsp each)
2 or 3 green cardamoms
1 black cardamom
1 stick cinnamon
2 or 3 cloves
some zeera
a few whole black peppers
a piece of star anise.

(i am not a big fan of garam masalas....but they really give a nice taste to the rice)...
when the rice are a bit more than half way cooked....drain them
then add half of them back to the pot....layer with the shrimp salan,put the other half of the rice......put some yellow food color in the middle with some cooking oil.....garnish with some fresh cilantro and put it on dum......i usually put it for like 10 mins....but u can see how long u have to depending on how cooked the rice was....
after the dum,mix the rice and serve.....

I dont see how it would be different than chicken or mutton biryani. Just use shrimp as the meat, and keep the same procedure, no?

I have an old cook book from way back when, when people rarely had refrigerators and everything i try from taht book comes out great. The recipe listed there is as follows:

Fry onions till brown, keep aside. In the same oil, lightly fry the shrimp. When the water is dry from the shrimp, add lemon juice, salt, red chili powder, sabut garam masala and bhoonify for a bit. Then add yogurt and cook until it thickens. Now grind the fried onions and add to the shrimp. Cook until well bhoonified.

Proceed like the regular biryani. Hope this helps.

btw there is no such thing like 'tested recipe'.... it all depends on how u cook...

The only good thing I can make is Shrimp Biryani.. :o
I just subtitute the chicken/meat with shrimps and use the classic Shaan pulao biryani masala. Shrimp cooks fast and it tastes sooo good.

According to the biggest sunni school of thought(hanafi) shrimp is reprehensible(makrooh) but not haram, according to other 3 schools its halal.

I don't eat prawns and shrimps but my husband does eat reluctantly.

I just make shrimp with some khara type of masala and layer them b/w white rice with brown onions and cilantro.

yep, i add on the pulao masala to the regular home made garam masala, red chili powder, etc that i make beforehand for the shrimp. sometimes if i want to make it spicy, i add on the regular bombay biryani masala as well but the pulao one gives it a kick without making it over spicy.

Biryani without yoghurt in the masala is not biryani.
Is it ok to add shrimps to the masala?

I always thought yoghurt and fish was a :nono1:

It is a myth that yogurt/milk and fish shouldn't be eaten togather.

I always add the yogurt. I kind of avoid milk for a couple of hours after consuming fish... even though back in high school, my lunches were fish sandwiches and milk.. lol. i guess i have given into the superstition.

Chips posted a good and simple recipe for shirmps biryani , shirmps biryani is almost same like mutton or chicken biryani but there are few little things which makes differance.
1-- i marinated shirmps in ginger garlic paste(optional). little salt,lemon juice or vinegar.red chilli powder and black pepper powder. and then fry them in little oil separatly. in fish biryani u have to add little ajwain too.
2- heat oil ,add methi dana and sabut zeera when they crackle , add sliced onions to it, when they golden brown not dark brown ,take half of them out in a plate and we used them in the end in rice layers. and in rest of onions add ginger ,garlic paste. cook for few min add salt but keep in mind that u added salt to rice and in marination too so use little salt,red chilli powder and cruhed red chillies,corriander powder,little heldi,cumin powder.some times i added chatt masala too. and it taste good.. cook for few min then add chopped tomatoes to it, cook them until they tender then add few spoons of yogurt, then addd paste of few green chillies,mint leaves and corriander leaves and bhoonify the masala well,some times i add dried alubukhara soaked in water to masala too.
3- boil rice with whole garam masala,bay leaves and salt.when they half cooked ,drain the water.
4- layer first rice then masala ,then shirmps, make one more layer.
5- In the end sprinkle litttle yellow colour or zafrani colour to it ,or add zafran to little milk and then add to rice. add sliced green chillies.and the brown onions.Make powder of jaiful and jawetri or crushed it and add to rice and sprinkle few spoons of lemon juice . put biryani on dum for 15 min.
if u dont add methi dana first then u have to add little fresh methi leaves or dreid methi in the masala when u add the green chillies paste to masala.
This is my tried recipe and turns out very good.
Methi dana makes it differant from reguler mutton biryani.

Do you put in whole methi dana or crushed? I am always scared to use them cuz they look like lil stones...

I put whole methi dana,dont crushed it,it becomes soft ,and if u dont have it can use dried or fresh methi leaves too .
Another thing as recomended by chips too dont over cook shirmps, 4,5 min are enough,and shirmps leaves too much water ,simply drain it and thenn cook.
