I have finally mastered the art of making lamb chops or lamb steak.
Marinate
Plain Yogurt (enough to just cover the meat)
Lemon Juice
Chilli powder (1 teaspoon)
kat-a-kat masala (laziza) - if you dont have this then add some Garam masala, and any spices you have. whatever you prefer
once you have left the meat to marinate heat a large and deep pan, which has a lid, and add the following
for 1kilo meat (guidline)
add - 1/4 cup of water and 1/4 cup of oil. let this heat. now add in the meat and the marinate and place on a very very low heat. the lowest heat it can go on. now leave this to cook. the longer this cooks, the better.
occasionally stir the meat around, and cover again. make sure no heat escapes from the pan.
it will probably take 1hour 30 mins, on an extremely low heat, so in the meantime u can just do other household chores.
once the oil/water has dried up, check that the meat is tender. if its not tender enuf add some more water, but just a touch. when its tender, put the heat highter and cook till all liquid remaining has gone.
serve the chops with any sauce of ur liking
