Types of Potatoes

There are several kinda potatoes…red, russet, sweet, idaho etc…Do you use a specific kind for a specific dish? What kind of potatoes are good for our salans?

Today I made aloo ka salan and it tasted a tad sweet to me. I wasn’t sure if it was the masala (shan aloo bhajia) or the actual potatoes…i have never paid attention to what kind I get.

I just get standard white potatoes or King Edwards for cooking...never have any problems.The only time I'm picky is when making potato salad...I buy new pots.

Floury potaoes are good for cutlets and mashing as new ones get all starchy and sticky.Have heard that maris Pipers are good.I did get some Chopin potatoes from M&S the other week and they were so yellowy in colour but very nice tasting.

yukon potatoes are the best! no matter if you are baking, meshing or using in salan etc
