Two techniques of cooking desi food ..

Some ladies put all the ingredients together in a pot , along with spices and Pressure cook it for a few minutes and than they bhoono it to ready any desi dish.

Some other ladies like to add one ingredient at a time and bhoono the masala first and then in the end add water and let it simmer until the dish is fully done.

Question is , which method gives best results? any thoughts ?

LOL, this is a daily issue in my household. My grandma prefers the former way of cooking whilst my mum prefers the latter. I too personally prefer the latter as I feel the masala gets cooked properly and has the chance to give off all it's flavour.

Latter. Masala gets a chanxe to properly be cooked. Pressure cooker is a huge time saver ... but flavor wise it falls a bit short.

I think the latter one.

However, there are some, just some recipes where you can throw everything into the pot, and it will come out great.

My mother taught me the all in the pot method and it was a good way to cook for a beginner but for several years now I cook the latter method as I feel that is the authentic method of cooking desi food. My mother still does it her way and tries to get me to do things her way but I prefer my own methods now lol

for daily cooking its the matter of time management. Sometime we have time to go through 2nd process, sometime we are busy and put everything together and bhonOO at the end.

For dawat's etc its always 2nd method.

Never ever the first method. Thats why I spent at least 15 hours in the kitchen per week.

I just have to perfect every step; the day I feel like I am not with it, I simply wont cook but I will not accept my 'need to wanting to cut corners' out on the precious food to be cooked.

The second one always. The flavor comes out as perfection with it :)
