If you wanted to range beyond the usual kebabs and kofte, etc you could start with nohutlu mücver and ispanak mücver (chickpea and spinach fritters), hummus, roasted or smoked eggplant pureed with spices then for a main meal I would do lamb stuffed with dried fruit, nuts, and spinach and maybe a fish or chicken dish like sardines wrapped in grape leaves (asma yaprağında sardalya), octopus salad with potatoes and olives, or my personal favourite; taratorlu uskumru whic is smoked mackerel with a sauce made from walnuts. For sides I'd do tomatoes, yogurt and sumac, some kind of pilaf, maybe zeytinyagli enginar which is stewed artichoke bottoms or kisir... you could also do stewed okra (though I find people always have strong feelings about okra... they either love it or hate it. No in between) And dessert could be a range of compotes or stuffed fruit. You could also do a couple different puddings as they can be made well in advance such as keşkül or sütlaç. And of course always you must have a range of flatbreads and serve salep if you can find a good source for it!
