Here come the trimmings:
Basic White Sauce
1 cup milk
3 tbsp butter
3 level tbsp flour
Ground Black pepper to taste
Melt the butter in small saucepan. Slowly add flour, stirring constantly. Once it becomes smooth without lumps, slowly add milk while stirring or whisking. Sprinkle with black pepper to taste. Never let it come to a boil, just heat and stir until thick and smooth. Note, if you stop stirring for too long, it will form clumps! Stir stir stir!
Cheese sauce
Follow recipe for basic white sauce. Once the milk is added, stir in grated cheddar cheese (about 12-14 ounces for each cup of milk).
Turkey Trimmings:
Broccoli (and/or cauliflour) with cheese sauce
Trim broccoli and/or cauliflower and cut into florets. Steam in about 3 inches of water until fork-tender. Use some of the water to add to pan gravy. Once steamed, put in bowl and pour cheese sauce over.
Onions in white sauce
Get 1 lb of small white or pearl onions. Boil in small saucepan in the skins till fork-tender. Reserve some of the water to add to gravy. Rinse onions under cold water until cooled. Peel off outer layers of onions, place in bowl and pour white sauce over.
Green bean casserole: sorry, I just get the recipe from the can of green beans, or on the can of French;s dried onions! If I remember right, its canned green beans mixed with cream of mushroom soup then the dried onions on top, bake in warmed oven.
Mashed potatoes:
Peel potatoes and quarter them, trying to keep the pieces even sizes. Cover with water, add 1 tbsp chopped garlic and 1 tsp salt. Boil till fork-tender. Reserve about 1 cup water for gravy. Drain potatoes, return to pot. Add 1 stick of butter for each 5 lb. potatoes, cover and let butter melt a bit. Then mash potatoes, add milk while mashing until desired consistency. Use an egg-beater for extra creaminess.
Mashed turnips
Peel and cut turnips into evenly sized cubes. Put in pot, over with water and add 1 tbsp sugar. Boil till fork tender. Reserve about 1 cup water for gravy. Drain the turnips and return to pot, add 1/2 to 1 stick of butter, cover and let the butter melt. Mash turnips till desired consistency.
