Turkey Recipes...PLEASEEEE

Few years back we stopped making turkey and started making about 2 chickens roasted instead with american and desi side dishes to please all that were over for dinner. This year I kinda wanna make a turkey, if I can find a small baby turkey that cooks easily.

Please post good FLAVORFUL recipes. all the american recipes I run into are so simple and seems the meat will be left bland. Ooh and any tips on keeping the meat moist would be well appreciated.

Otherwise i will resort to my Herb Roasted Chicken

  1. Take a therkey ... errr ... turkey
  2. Cook it!

to make a good turkey keep it simple, no damn garam masala and shyt that desis want to add to turkey to try and give it "apnay khanay jaisa maza" (or maja as indians would say it)

I made Turkey two years back, and it comes out good, here is my recipe.

I take 10 lb turkey, then rub lemon juice, oil, salt and ground black pepper in and outside it, take one bulb of garlic, one white onion and two lemon cut in halves, put these inside the turkey, you can use thyme but I didn't use it. Tie the legs and put in baking pan and cover with Aluminum foil

Heat oven at 375 degree and bake it for 2-3 hrs (up to yours oven setting) when it is almost done remove foil and bake for 15-20 min to give golden brown colour.

The side dishes I made are mashed sweet potato and baked salad. I also bake Pillsburry butter milk biscuits and made some vegetable rice.
I made mashed sweet potatoes by baking them in the oven at 350 for 1 hr, then peel and mashed it then in a pan heat some butter then add some pecans in it finally add sweet potatoes fry them season with salt and pepper.
I bake veges like potato, onion, bell pepper carrots, by mixing them salt, pepper and oil in it, bake them for 30- 35 min after baking sprinkle some lemon juice on it.

After baking I remove turkey from pan and from the remaining juice from turkey I made gravey by mixing some corn starch and seasoning.

Cranberry sauce and corn are in tin pack, ready to serve. Season corn with salt and pepper.

Brine:
1 cup kosher salt
1 cup brown sugar
1 gallon water
18 to 21-pound turkey, skin intact and boned except for drumsticks
House seasoning, recipe follows
Cornbread Dressing, recipe follows
3 to 4-pound duck, boned
3 to 4-pound chicken, boned
Paprika

To make the brine: Mix salt and sugar with the water. Brine is ready when the mixture is completely dissolved. If the water is heated to quicken the process, make sure it is cooled to room temperature before placing meat in. Let the 3 birds sit in brine in the refrigerator overnight.
Preheat roaster to 500 degrees F.

Lay turkey skin side down on a flat surface. Dust turkey with House Seasoning and add 1/4-inch layer of cornbread dressing. Lay duck skin side down on top of dressing. Dust duck with House Seasoning and add 1/4-inch layer of dressing. Repeat with the chicken.

Begin trussing up the turkey at the neck. Insert metal skewer about 1/2-inch from the edge and up through the other side. Run butcher’s twine between skin and skewer and tighten to draw both sides together. Continue down to legs. With every other skewer, draw together the duck and chicken skin. Tie together turkey legs to resemble standard turkey. Dust turkey skin with paprika.

Roast turducken for 15 minutes. Then turn the roaster down to 225 degrees F to finish, approximately 3 hours. Remove turducken from roaster once the internal temperature in the chicken reaches 155 degrees F. Let rest for at least 20 minutes before carving.

Cut across the middle of the breast completely through. Plate thin slices containing turkey, duck and chicken.

Cook’s Notes: If using a smoker to cook, smoke at 225 degrees F for 5 hours, rotating every 20 to 30 minutes until internal temperature reaches 155 degrees F and external temperature reaches 165 degrees F. Try to keep the flare-ups from the fire to a minimum.

House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.

Cornbread Dressing:
Cornbread:
1 cup self rising cornmeal
1/2 cup self-rising flour
3/4 cup buttermilk
2 eggs
2 tablespoons vegetable oil
Dressing:
7 slices white bread, dried in warm oven
Cornbread
1 sleeve saltine crackers
2 cups chopped celery
1 large onion, chopped
8 tablespoons butter
7 cups chicken stock
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 teaspoon dried sage
1 tablespoon poultry seasoning
5 eggs, beaten

Preheat oven to 350 degrees F.
To make the cornbread, combine all ingredients and pour into a greased shallow baking dish. Bake for approximately 20 to 25 minutes. Remove from oven and let cool.

To make the dressing, crumble dried white bread slices, cornbread and crackers. Mix together and set aside. Saute chopped celery and onion in butter until transparent, approximately 5 to 10 minutes. Pour over corn bread mixture. Add stock, mix well and add salt, pepper, sage, and poultry seasoning. Add beaten eggs and mix well. Follow instructions above to stuff birds.

Yield: 8 to 10 servings

I dont have alot of time at the moment but I learned to cook a traditional american turkey dinner with all the trimmings from the best - my mom. I'll start with just the turkey, stuffing and gravy then come back later with "trimmings": mashed potatoes and turnips, broccoli with cheese sauce, pearl onions in white sauce, green bean casserole.

If your turkey is frozen, thaw it in refrigerator wrapped in a wet towel. Once thawed, wash completely. Mix seasoned bread cubes with 1 stick melted butter and enough very hot water to make it almost like dough. (NOTE: my mom makes her own stuffing from stale bread but I've never had success with this...I buy the bags of seasoned bread crumb cubes and comes out almost as good - I usually get "italian seasoned" ones but there are other flavors too) You can add extra seasonings to taste (parsely, sage, rosemary and thyme, just like the song!). Spoon the stuffing into the large cavity until its loosely filled. Stuffing will expand during cooking so do not overstuff. Coat the turkey with melted butter (or Pam if you prefer) and sprinkle with garlic and pepper. Cover loosely with foil and roast in oven (according to instructions on the package). During the last hour of roasting, uncover it and spoon pan juices over the entire bird, every 15 minutes so that the outside turns nicely browned. When done, remove stuffing from turkey immediately and keep warm in the oven. Let the turkey "set" and cool for 30 minutes before carving. RESERVE the turkey pan and its juices - place on burner on the stove under low/med heat, stir and scrape bottom of pan. Add about 1 cup of each (depending on size of turkey): water from the boiled potatoes, water from the boiled turnips, 1/2 cup water from the string beans, 1/2 cup water from onions. Stir and scrape until simmering. Thicken the gravy with cornstarch/water mixture (about 1/4 cup water and 2 tsp cornstarch). Thickening takes about 15 minutes, add more cornstarch mixture as necessary.

Just a note, this is a "simple" (some say bland) meal but thats how its meant to be and thats how it tastes best. If you add too much spice, its just not the same thing....when you roast it really nicely without all the extra spices, it is just heavenly!

Here come the trimmings:

Basic White Sauce
1 cup milk
3 tbsp butter
3 level tbsp flour
Ground Black pepper to taste
Melt the butter in small saucepan. Slowly add flour, stirring constantly. Once it becomes smooth without lumps, slowly add milk while stirring or whisking. Sprinkle with black pepper to taste. Never let it come to a boil, just heat and stir until thick and smooth. Note, if you stop stirring for too long, it will form clumps! Stir stir stir!

Cheese sauce
Follow recipe for basic white sauce. Once the milk is added, stir in grated cheddar cheese (about 12-14 ounces for each cup of milk).

Turkey Trimmings:
Broccoli (and/or cauliflour) with cheese sauce
Trim broccoli and/or cauliflower and cut into florets. Steam in about 3 inches of water until fork-tender. Use some of the water to add to pan gravy. Once steamed, put in bowl and pour cheese sauce over.

Onions in white sauce
Get 1 lb of small white or pearl onions. Boil in small saucepan in the skins till fork-tender. Reserve some of the water to add to gravy. Rinse onions under cold water until cooled. Peel off outer layers of onions, place in bowl and pour white sauce over.

Green bean casserole: sorry, I just get the recipe from the can of green beans, or on the can of French;s dried onions! If I remember right, its canned green beans mixed with cream of mushroom soup then the dried onions on top, bake in warmed oven.

Mashed potatoes:
Peel potatoes and quarter them, trying to keep the pieces even sizes. Cover with water, add 1 tbsp chopped garlic and 1 tsp salt. Boil till fork-tender. Reserve about 1 cup water for gravy. Drain potatoes, return to pot. Add 1 stick of butter for each 5 lb. potatoes, cover and let butter melt a bit. Then mash potatoes, add milk while mashing until desired consistency. Use an egg-beater for extra creaminess.

Mashed turnips
Peel and cut turnips into evenly sized cubes. Put in pot, over with water and add 1 tbsp sugar. Boil till fork tender. Reserve about 1 cup water for gravy. Drain the turnips and return to pot, add 1/2 to 1 stick of butter, cover and let the butter melt. Mash turnips till desired consistency.

Mamof3, I really appreciate that, I think I am going to try it, but I need the spiciness, maybe rup a little hot pepper onto it as well? Is it well flavored with the recipe you gave? Often I have issue where the bird is tasty on the outside, and bland on the inside

The spices that you rub on the skin of the turkey penetrate to no more than 1/4 inch....so yes the meat is rather bland....but the idea is to slather it with the delicious pan gravy that you make with all the roasted drippings and vegetable water. Not sure how hot pepper would taste with turkey, I've always followed the song "Parsley, sage rosemary and thyme"....

we usually made roast chicken on Thanksgiving cuz the Desi spices didn't go well with the turkey. just wondering, does anybody have a desi roast chicken recipe that has that spicy kick to it?

Don't Pakify the Turkey, they taste naff like that. My aunt uses lemons and oranges. I dont quite know how as I never cook on Christmas day but im sure you can find a recipe from somewhere.

the whole family voted against turkey, and all for chicken...jeez. Instead I made 2 chickens....1 cut up with lemon pepper, besan and thania masala...it was veryy good...
and the other i roasted whole with herbs (fresh rosemary, basil and lemon)...but it was ok, i totally forgot to salt the chicken even though i marinated overnight...so wasnt salty enough.,....but it was a good shot still...also made lots of roasted veggies...asparagus, eggplant, zuccini, and of course rosemary roasted potatoes. My cousin made macaroni salad...and ammi made beef pilao...dehi ballay....hehe....had to make it desi somehow. But not so bad.
