Make filling , like you would for anything else (samosay, etc.) the “karari” (spicy) the better. In this case it was chicken, matar, corn, mirch masala, etc… you can add other stuff as well such as aloo? :smiley:

Then you cut the top of the shimla mirch so it makes a perfect lid

Add filling and steam cook it until mirch is soft and tender
