That looks like it would be fun to try! Much easier than making a regular rainbow cake. I quite like the idea of rainbow/multi-coloured coloured layer cakes.
I’ve made a couple ombre cakes before and while it wasn’t difficult per se, it was just super time consuming as each shade/layer had to be prepared and baked separately and, oh dear, the clean up.
