i trust him all the time for every thing coz i believe k koi khushi koi gum ALLAH ki ijazet k bagair humain nahi milta aur jab koi masla hota hai to us say nikalnay ki taqat bhi ALLAH PAK hi daita hai so sab acha hi hoga INSHALLAH.....

I don't think there is such a thing as trusting someone 100% in every category. Even couples don't tell each other every single thing. When we say 'I trust you' to someone, it usually means in a specific context.
As an example, I fully trust my parents' desire to see me happy, but I don't trust them to make the right decisions for me all the time.
A common example would be people who have the tendency to spill secrets out in their conversations unintentionally. You may trust that person for other things, but will avoid sharing secrets because you know they will most likely not be able to keep them.

I would say, no, you can't trust others with everything. Simply because trust is not about any one thing.
I can trust my parents to love me forever and want the best for me. But I KNOW that they can make mistakes.

No! People have to earn your trust and the trust of others, they have to prove they are honest and trustworthy, and you don't find many people like that nowadays. And yes there are different levels of trust.
