Too much meat! Veggie iftar ideas pls!

Salam all

Ever since Ramadan started I’ve been making some form or other of chicken. We all love chicken, so it’s been going well so far, but I’m just bored of it now.

I made tuna pasta bake the other day which was a nice change. We also have fish, lamb and keema in the freezer, but I would rather make veggie today. Any nice ideas for iftari???

So far I’ve thought of bhindi… :wub: also my husband bought tinday the other day which I’ve never seen in my life before nor have I cooked - any good recipe ideas for that?

Paneer Tikka??

Ive made this many times - recipe I got from the khana Khazana website:

Ingredients

1 Large block of Paneer
1 onion
1 Capsicum
1 Tomato
Few Mushrooms
Finely chopped Coriander leaves
To Marinade:
1/2 cup Curd (plain yogurt)
1 tsp Garlic paste
1 tsp Ginger Paste
2 tsp Tandoori powder
1 tsp cumin (jeera) powder
2 tsp Chaat powder
Salt to taste
Red chili Powder to taste


How to make indian paneer tikka recipe :****

  • Cut Paneer into long 1/2" thick cubes.

  • Cut all vegetables into cubes.

  • Mix all ingredients for marinade and keep aside.

  • Add the left marinade to the vegetables.

  • Brush the marinade to the paneer and refrigerate it for 3 hours.

  • Heat oil in a kadhai and fry marinated paneer till fully done.

  • Also fry other vegetables.

  • In a plate arrange fried vegetables and then paneer.

  • Garnish with coriander and lemon slices

OOpps! Just realized you are after a tinday recipe (I don’t even know what they are!) - my apologies!!

Paneer one is good to try when you do want a diff veggie one :slight_smile:

^^ no I’m not specifically after tinday, just that I have them so would be good to use. I was also thinking paneer and spinach or something but I’ve never made paneer before either - this recipe looks nice :slight_smile:

You can cook them with meat or with without.

Make the masala, add peeled and chopped tinday. Cook on medium low heat till tender. Enjoy with green chutney and roti.

To cook in meat.

Chicken:

Make masala, add chicken, bhonafy chicken for few minutes, add peeled and chopped tinday. If you wanted shorba, add 1/4-1/2 cup water. Cook on medium low heat till both chicken and tinday are tender.

Meat:

Make masala, add meat, bhonafy for few minutes, add tinday, 1/2 cup water. Cook till tender. I normally cook goad or lamb in pressure cooker.

The other way is to make the ghost salan, add tinday and cook them till tender.

Tinday is a cousin of zucchini.

Tinday are delicious…great summer vegetable.

So do I treat tinday like I would aaloo? I mean peel and chop them into cubes and just galaa them in shorba? Are they quicker to cook than aaloo? And if I were to make just tinday salan, do you have a shorba wala salan or is it supposed to be dry?

(I don’t know what zucchini is either :bummer: have heard of it but don’t think I’ve ever eaten it, and definitely have never cooked it…)

Zucchini is also called courgette. It’s a member of the squash/gourd family just like tinday.

It tends to have a higher water content than a potato which is more starchy so it won’t exactly mash the same way.

You can cook it booth in shorba or kind of like bhujia.
