I dont put them in every dish, neither does my mum...
For example in just normal shorbay wala chicken salan we dont use it in our family.

Pulao i can understand.....but in qorma thats just odd!!
I personally think that anything with yoghurt doesnt need tomato because tomato adds that zing and tang that yoghurt does..
Also i find that people who do use alot of tomato in their cooking in everything...all their food tastes the same....

Pulao i can understand.....
Pulao dates back to 2000 years or more whereas Tomatoes are only in use for only 500 years ago! When you add tomatoes and chillies to pulao it will become biryani - which is actually derived from pulao.

pulao is kind of soup and rice.
biryani is not all about tomatoes and chillies.

well yes authentic pulao doesnt include tomatos but i can see it still tasting ok with tomatoes in it..
I dont think chillis and tomatoes in pulao makes it biriyani though there is sooooooooooooooo much more to biriyani that that!

All the curries are a result of Indianization of central asian dishes such as koftays, kebabs and organ meat!

I do not say that by putting tomatoes and spice in meat and rice, the thing will become biryani but its been gradually modified to biryani over the last 500 years!

It irks me when people put tomatoes in dishes that require them. Some curries I'll cook with tomatoes others with a yogurt base. I never cook pilau with tomatoes though, I do cook tomato wale chawal, which is something else entirely
