sorry for the delayed reply. Here are my thoughts:
- The main source of as when should we stop eating for sahar is following Quranic verse
2:187) …..And eat and drink until the white thread of dawn becomes distinct to you from the black thread [of night]…..
Mostly, molvi sahibaan give azaan way before dawn. to explain my point here is a hadith from bukhari
Volume 1, Book 11, Number 591:
Narrated Salim bin Abdullah:
**My father said that Allah’s Apostle said, “Bilal pronounces Adhaan at night, so keep on eating and drinking (Suhur) till Ibn Umm Maktum pronounces Adhaan.” Salim added, “He was a blind man who would not pronounce the Adhaan unless he was told that the day had dawned.”

so please note that there is no direct correlation between azaan and stop eating, it is the time mentioned in 2:187 that matters and the above hadith is quite self-explanatory from that perspective
