Tihaari, taheeri.. I really don’t know what it’s called. blueangel told me about it and I also saw it in Nikki’s blog… would someone PLEASE post a recipe?

This is my tried and tested recipe of chef zakir :k:

Aloo ki Tahari

½ kg Rice [soak in water half hour before]
2 small onions
4 potatoes cube
4-5 green chilies [cut in 3-4 julian pieces]
1-1/2 tbsp haldi
1tsp crush lal mirch
1-1/4 to 1-1/2 glass water
salt to taste
½ cup ghee
2-3bay leaves, 3-4 dar chini, 2-4 bari ilaichi , few cloves and black pepper, 1tsp sabet zeera.

Method:

Cut onion in slices.
Melt ghee and add onion with sabet garam masala. Cook till aroma comes
Then add potatoes and green chilies mix it. Add haldi and salt, and cook till haldi ka kacha pan nikal jaye
add water and water starts boiling add crushed red chilli and then add rice
When water starts evaporating and bubbles appear keep it on dum on low flame.(same way we do in pualo)

  • what I do is that instead of putting 1 tsp of crushed chilli I add 1/2 crushed and 1/2 powdered chilli. You can try that if you like

off course it was the first time I made tahiri I used ghee afterwards I always used oil :) I have actually posted his recipe exactly the way he taught it !

aaah so simple ...and so yummy dish specially if you eat it with KACHOOMER (onion, cilantro, tomato, green peppers)

Yes and with kairi ki chuttni (ambi) during these months!

BTW some people call it Aaloo ki biryani as well.

My mother used to cook it both ways:

White one: without haldi

Yellow one: with haldi

btw, here is how I make it (enough for 2 people). I dont use red-chilli powder.

Ingredients

  • 1 1/4 cup rice (presoaked for 30 min)
  • 1 tsp garlic paste
  • 1/2 tsp ginger paste
  • 1 tsp salt (or as per your taste)
  • 1/2 tsp turmeric powder
  • 5-6 cloves
  • 5-6 whole black pepper
  • 1/2 tsp cumin seeds
  • 1 Black Cardamom
  • 1 stick of cinnamon (optional)
  • 1 large tomato
  • 2-3 green chilies (whole)
  • 3-4 potatos peeled and cut in half (to give variation I sometime use boiled eggs too)
  • 1 medium sized onion
  • 3-4 tbs oil

Preparation

  1. Fry the sliced onion in oil until transparent.
  2. Add all spices including green chilis and chopped tomato along with 1/2 cup water and cook on medium flame until the spices are well mixed and the tomato has softened. You can mash the tomato occasionally.
  3. Then add the potato and 1 glass of water, cover and cook till the potatos are almost soft.
  4. (optional) Add whole boiled eggs and stir for a min
  5. Add in the pre-soaked rice and water so much so that it reaches 1 1/2 cm above the surface of the rice.
  6. Cover and cook on high heat until the rice are soft.
  7. Then lower the heat to the minimum and remove from heat after 5 minutes.
  8. Serve with Kachoomer or Raita
